My kids want chicken spaghetti?

All the recipes I have found have Velveeta in it, which I find disgusting and really unhealthy. All I know from them is it has chicken, spaghetti, and "creamy stuff" in it, and it's baked in a casserole-type pan. Their mom used to make it for them before their dad divorced her, and I don't want to ask her for the recipe. It probably had Velveeta in it anyway, knowing her. . . . Any ideas would be much appreciated!

  1. Just use a good aged cheddar. Velveeta has no taste anyway.
  2. I think Velveeta is gross too. I can't even stand to look at it! Here's the recipe I use---you can also substitute low-fat cheese/mozzarella/parmesan to make it a little more healthy: Ingredients: 4 to 6 chicken breasts, cooked, reserve broth 1 bell pepper. green or combination 1 onion 1 can cream of chicken soup 1 can cream of mushroom soup 1 can Ro-Tel tomatoes, (with green chiles) 1 can stewed tomatoes 1 package spaghetti, (16 ounces) 1 package shredded cheddar cheese, (16 ounces) Preparation: Cook spaghetti in broth. Chop chicken and saute with pepper and onion in a large skillet until vegetables are softened. Add soups, Ro-Tel, and stewed tomatoes. Cook on low until bubbling, then stir in chicken and spagetti. If skillet is not oven safe, transfer to a lightly greased baking dish. Top with cheddar cheese and bake at 350 degrees for 20 to 30 minutes. Serves 4 to 6.

It was probably spaghetti and chicken parmesan Ingredients 1 lb spaghetti, or other pasta, cooked to desired doneness 1 24-ounce jar of your favorite pasta sauce 4-6 breaded chicken patties OR un-breaded, cooked chicken breasts (I do this more often than not) 1 cup grated mozzarella cheese 1/4 cup grated Parmesan cheese Directions Preheat oven to 350F. Spray a lasagna dish or other rectangular baking pan with cooking spray. Toss cooked pasta and 2/3 jar of sauce together and spread evenly into pan. Sprinkle spaghetti with 1/2 cup of mozzarella. Top with chicken patties. Pour remaining sauce over all and sprinkle with the rest of the mozzarella and Parmesan cheeses. Cover with foil and bake for 20-30 minutes until heated through. Serve each chicken patty with spaghetti underneath. Notes It's important to add sauce to the pasta before placing the dish in the oven; plain pasta doesn't bake as well. My kids like this even without the chicken.

CHICKEN SPAGHETTI CASSEROLE 1 cooked, boned chicken 1/2 c. celery 1/2 c. onion 1/2 c. bell pepper 2 tbsp. butter Sm. jar pimientos 1 can mushroom soup 1 can cream of chicken soup 1 tsp. ground black pepper 1 pound package spaghetti, cooked and cut into 4 inch lengths 1 c. grated Parmesan cheese Saute celery, onions, and bell pepper in butter; add soups, pimiento, and black pepper. Place 1/2 spaghetti in casserole dish. Add 1/2 the boned chicken and pour 1/2 of soup mixture over this. Cover with 1/2 cup of grated cheese. Repeat with the other half of ingredients, ending with grated cheese on top. Bake at 350 degrees for 1 hour. Serves about 12 people. _________________________________ CHICKEN SPAGHETTI 1 fryer 1/2 stick butter 1/2 c. onions 1/2 c. green bell pepper 1 box spaghetti (7 oz. ready cut) 1 jar pimentos 1 can mushroom soup 3/4 c. sharp cheese, grated 1 tsp. salt Broth from chicken Cut up chicken. Cover chicken with water in a 3 quart saucepan. Add salt to water. Cook until tender. Cool and take meat off bone. Leave broth in pan. Put butter in skillet. Add onions and bell pepper. Cook until soft. Cook spaghetti in chicken broth. Drain spaghetti, but not dry. In a bowl, put chicken, the cooked onions and peppers, spaghetti, pimentos and mushroom soup. Mix well. Put in an 8 inch square baking dish and top with grated cheese. Bake in preheated oven at 350 degrees until cheese is melted.

I would ask your hubby, if not its probably best that you just let their mom do it...contacting her would be bad especially if she doesnt like you then she'll try and think something crazy! I know from experience. My step daughter is the same way. She used to love when her mom made squash and corn. I tried to make it twice and asked her which one she liked better, and she LOVED the 2nd one (they were made a little differently). But i wasnt about to ask her mom either. My hubby gets along with her mom so my next step would be having him ask her...GOOD LUCK!
  7. Sounds like some kind of cheesy chicken alfredo pasta. If you get a couple jars of Alfredo Sauce from the store and melt some shredded cheddar into it, that will form a nice cheesy cream sauce (I'd add about 1/2 cup milk too) and whisk the cheese into a warmed sauce. The sauce will be "soupy" but when you mix it with al dente noodles (try shells or farfalle) and into a casserole dish, it will thicken up while baking. Add some diced chicken breast into it. Kids like Velveeta melted and though it is unhealthy, do they eat it every day? Try the cheddar, but it doesn't melt the same way...
  8. Personally, if I wanted chicken spaghetti, I would fry up a few parts, e.g., breast, leg, etc. in a small amount of olive oil... drain them, and add them to my regular sauce. But it does sound like maybe it's chicken, mushroom or celery soup, and the spaghetti noodles. Good luck! God bless!
  9. Cook boneless skinless chicken breasts in a large skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some pasta following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta. Feeling more energetic? Dip the chicken into beaten egg and roll in bread crumbs & Parmesan cheese before frying it and call it Chicken Parmigiana.
