- Time to try something different! Why not Indian..it is the rage these days! Classic northern chicken curry Serves 6-8 900g small chicken or 2 poussins, skinned and jointed 4 medium cooking tomatoes, pureed 2 small-medium onions, finely chopped 4 tbs. Oil 700ml water or more 7 cloves 3 shards cinnamon 7 green cardamom pods 8 fat cloves of garlic, finely chopped 3 tbs. finely chopped ginger 1 tsp. each turmeric and red chilli powder 2 scant tbs. coriander powder salt to taste 1 tsp. garam masala handful of coriander leaves Heat the oil in a large non-stick saucepan. Add the whole spices and fry until aromatic, around 20 seconds. Add the onion and cook until a rich golden brown, stirring often, around 10 minutes over a moderate flame. Stir in the ginger and garlic and cook for s further 40 seconds before adding the salt and powdered spices, stir for a further 10 seconds. Pour in the tomatoes and cook over a moderate flame until the liquid in the pan has dried off and the oil leaves the sides of the dry masala, around 10 minutes. Add the chicken and brown over moderate to high flame for 3-4 minutes. Add enough water to almost cover the chicken, bring to a boil and then cook over a slow to moderate flame until the chicken is cooked through. The slower it cooks the better it tastes. This takes about 15-20 minutes for small joints and up to 25-30 minutes for larger ones. Stir in the garam masala and coriander leaves. Serve with rice or bread. ___________________ Lamb burgers with herbed yoghurt Makes 6 burgers 450g lamb mince 1 small onion 1 large onion, sliced crosswise into large rings 3 plum tomatoes, sliced crosswise Lettuce leaves to serve 2 slices of thick-cut white bread, crumbed or enough to bind well 6 hamburger buns 2 tbs. oil 1 large egg 20g butter (optional) 4 large cloves garlic 20g coriander stalks and leaves 1 1/2” fresh ginger 1/2 tsp. cumin powder 1 1/2 tsp. garam masala 1 rounded tsp. salt or to taste 2-3 green chillies, chopped or 1/2-1 tsp. red chilli powder Roughly blend together the onion, ginger, garlic, coriander and green chillies. - oh so so easy! I make italian style yum dinner. OK in one pan use fat free italian dressing.. stab the pork chops with a fork (or chicken) to allow the dressing to get in them. Flip them over and around to get them nice and flavored. Sprinkle a bit of salt pepper and garlic powder on top. Bake at about 375. Another pan. Chop up bite size pieces of your preffered potatoe. Throw them in a gallon size zip lock with about 1/4 to 1/2 cup of extra vigin olive oil, italian seasoning, garlic powder, salt, and pepper. Close back and shake it up to coat all the potatoes. Dump them into a foil lined pan (easy clean up) and cover and bake (same time as pork chops) for 30 minutes covered with foil. Then remove foil and bake for an additional 10 to 15 minutes. And when you uncover the potatoes... that would be the perfect time to cook frozen veggies and make some grands biscuits. Truly easy. Truly a hit. I throw this stuff in the oven and go out for a walk. =) Clean up is a cinch when you line with foil and spray with nonstick spray first! You can do this with other marinades for the meats, and sweet potatoes/yams too. (minus the garlic and italian seasoning) Another easy hit Lean london broil cut steak.. crockpot (or stove on really really low flame for about 3 hours) with your favorite beef marinade. Cook until fork tender in a half a bottle or more of the marinade. slammin baked potatoes: bake potatoes and make cups up for each one. Mine get sliced fresh scallion/green onion, bacon bits, shredded cheese, and sour creme. When I open the potato I throw the butter on and then each cup goes on top of the potato. (copying outback steakhouse) I also rub olive oil and a little salt on the potato skin and poke fork holes in it... cooking it in foil at 350. Whatever side veg you prefer a few mintutes before, and voila!
