I'm making BBQ chicken wings help please?

how can i get the skin on my chicken wings kind of hard. I'm making them in the oven and I dont like that fatty softness of the skin

  1. Leave them uncovered in the oven and they will be dry and hard. If you cover them, they will retain moisture.
  2. Marinate them for a while first in a mixture of a little olive oil, plenty of ketchup, honey and orange juice and add any spices or condiments you like. Nice hot oven and keep turning them over to stop them sticking.
  3. Season with dry spices Spread on pan in a single layer Bake at 450 for 25-30 minutes, turn half way through baste with 1/2 BBQ and 1/2 Honey, add hot sauce, mustard, etc.... Bake 15 and re baste you will get the crunchy skin with the sticky sauce on the outside.
  4. Bake them covered, during last 45 minutes, uncover, during last 15 min. slather with BBQ sauce, after pouring off grease and juices.
  5. use a rack or broiler pan so juices fall off the wings, will produce a more crunchy crust
  6. If you are making your wings from scratch, the other options are fine, but it seems to me you may be using the frozen brand? If you are, I would suggest cooking them fully through and popping them under the broiler for a few minutes, a nice browned and caramelized skin will result. Make sure to flip them, as the underside will most likely be soggy from sauce. Good eats!
