does anyone have a recipe and 'how to'for biscuits like popeyes chicken or hardees biscuits?

- I haven't made them, but: Ingredients 4 cups Pioneer Buttermilk Biscuit Mix 1 cup lite sour cream 1 cup cold Sprite 1/4 cup Butter Directions Melt butter in a bowl. Mix all ingredients together and form biscuit. Mixture will be sticky. Do not overwork; this is a drop biscuit. Coat the biscuit on both side with some melted butter and place on cookie sheet. Bake at 375 degrees for 25 to 30 minutes. Serve warm.

- Those light, fluffy biscuits? This is the closest I've come. Very important is not kneeding to much, handle the dough as little as possible and I've had better luck when I let them sit at room temp after placing the formed biscuits on the cookie sheet. 1 cup skim milk 1 tablespoon freshly squeezed lemon juice 9 1/4 ounces all-purpose flour, plus extra for rolling 4 teaspoons baking powder 1/4 teaspoon baking soda 3/4 teaspoon salt 1 ounce unsalted butter, chilled 2 tablespoons shortening Preheat the oven to 450 degrees. Combine the milk and lemon juice in a glass measuring cup and place in the refrigerator. In a large mixing bowl, whisk together the flour, baking powder, baking soda and salt. Using your fingertips and working quickly, rub the butter and shortening into the dry ingredients until the mixture looks like crumbs. Make a well in the center and pour in the chilled milk mixture. Stir just until the dough comes together. The dough will be very sticky. Turn the dough onto a floured surface, dust top with flour and gently fold the dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place the biscuits on a baking sheet so that they just touch. Reform the scrap dough, working it as little as possible and continue cutting. Bake until biscuits are tall and light gold on top, approximately 15 to 20 minutes.
- I made biscuits at Hardees and this is not a bad clone. Of course they have a little envelope of stuff you mix in with the dough, so probably couldnt be exactlly the same HARDEE BISCUITS 4 c. self rising flour 1 tbsp. baking powder 1 tbsp. sugar 2/3 c. Crisco 2 c. buttermilk Mix ingredients together. Do not knead dough. Roll out 1 inch thick on floured board or cloth. Cut out. Brush tops with buttermilk. Bake at 400 degrees for 15 to 20 minutes. Nice and brown
