I am looking for some different Chicken recipes that are easy and healthy?

I have chicken for dinner tonight, I have been on a diet that is mainly veggies with protein - no starches, What is something I can make that is healthy and taste great? Any ideas? Thank you!

  2. I love salsa chicken.... just bake up your chicken like always but put a couple of spoons of your fav salsa on each piece for the last 10-15 minutes

  6. I hear that chickens like to eat "cornmeal". If you serve cornmeal to your chicken, I'm sure it will be very pleased. Be sure to serve little bits of gravel on the side, as it helps the chicken digest it's cornmeal...

  8. This one is SO easy you won't believe it and it's delicious: 1 whole chicken Lawry's seasoned salt Haul out your crockpot. Spray it with Pam. Take four large sheets of tin foil and ball them up individually and place them in the crockpot. Lightly run the chicken under the water to clean and dampen. Sprinkle the seasoned salt outside and a little on the inside. Place the chicken on top of the tin foil balls. Close the lid. Cook on HIGH for FOUR hours. THAT'S IT!! It comes out like deli chicken and all the fat runs off to the bottom. I'm telling you - this stuff is so good and it even browns up. Make sure you cook on high for 4 hours though - don't try doing it on low for longer. It may work - but I've always used the high setting.

Ingredients 3 tablespoons wheat germ 2 tablespoons honey 1 tablespoon Dijon mustard 1 tablespoon canned apricot nectar or apricot jam 3/4 teaspoon reduced sodium soy sauce 6 bone-in skinless chicken breast halves (trimmed of fat) Directions 1Preheat oven to 375 degrees. 2In a small bowl, mix together the wheat germ, honey, mustard, apricot nector or jam, and soy sauce until well blended. 3Arrange the chicken pieces, bone side down, on a baking sheet. 4Spread the wheat germ mixture evenly over the chicken breasts. 5Bake until the chicken is opaque throughout and the wheat germ mixture has formed a crust, 35-40 minutes.
  10. Grilled Chicken is very healthy and all of the fat is cooked off during the grilling process. You can sprinkle it with lemon pepper seasoning, if you want a healthy light dish. Another way is to marinade it in terriaki sauce, or bbq sauce. But when you marinade it, your adding lots of salt and some more calories. Although, marinades do make it taste yummy!   11. My favorite is get some low fat natural yogurt and add 1 teaspoon of Cajun seasoning. Coat the chicken breast in the yogurt for at least one hour, but even better in the fridge over night. Then just pop under the grill. It's very tasty and very low in fat. I also make low fat Chicken Kiev's. You get some low fat cottage cheese and add some crushed garlic and parsley. Slice a pocket in the chicken and stuff the cheese filling inside. Then wrap in bacon which has all the fat removed. Cook in oven for about 45 mins.

Preheat oven to 350 degrees F (175 degrees C). 2. Place chicken breasts in a lightly greased 9x13 inch baking dish or roasting pan. Dot each breast with 1 tablespoon of butter or margarine, then season each breast with dried basil and garlic salt to taste. 3. Bake at 350 degrees F (175 degrees C) for approximately 1 to 1 1/4 hours. Delicious Baked Chicken INGREDIENTS: 4 bone-in chicken breast halves, with skin 1 tablespoon olive oil 1 pinch garlic powder salt and pepper to taste 3/4 cup Worcestershire sauce DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Rub each chicken breast with olive oil, then place in a lightly greased 9x13 inch baking dish. Season with garlic powder, salt and pepper to taste. Pour Worcestershire sauce over each breast. Cover dish with aluminum foil and bake in the preheated oven for 45 minutes. Check chicken and remove cover if desired. Bake for another 15 minutes. Baked Honey Mustard Chicken INGREDIENTS: 6 skinless, boneless chicken breast halves salt and pepper to taste 1/2 cup honey 1/2 cup prepared mustard 1 teaspoon dried basil 1 teaspoon paprika 1/2 teaspoon dried parsley DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover. 3. Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving. Easy Garlic and Rosemary Chicken INGREDIENTS: 2 skinless, boneless chicken breasts 2 cloves garlic, chopped 2 tablespoons dried rosemary 1 tablespoon lemon juice salt and pepper to taste DIRECTIONS: 1. Preheat oven to 375 degrees F (190 degrees C). 2. Cover the chicken breasts with garlic, then sprinkle with rosemary, lemon juice, and salt and pepper to taste. Place in a 9x13 inch baking dish and bake in the preheated oven for 25 minutes or until done and juices run clear (baking time will depend on the thickness of your chicken breasts). Easy Grilled Chicken INGREDIENTS: 4 skinless, boneless chicken breast halves 1 cup fat free Italian-style dressing 1 green bell pepper 1 red bell pepper 1 zucchini DIRECTIONS: 1. Place washed chicken breasts in large sealable bag. Add 1 cup fat-free Italian dressing and close. Let marinate for 5 to 10 minutes. 2. Cut up peppers into big chunks, and zucchini into big slices. Put into another sealable bag. Coat with leftover dressing. 3. Grill chicken and veggies over medium heat. Easy Grilled Chicken Teriyaki INGREDIENTS: 4 skinless, boneless chicken breast halves 1 cup teriyaki sauce 1/4 cup lemon juice 2 teaspoons minced fresh garlic 2 teaspoons sesame oil DIRECTIONS: 1. Place chicken, teriyaki sauce, lemon juice, garlic, and sesame oil in a large resealable plastic bag. Seal bag, and shake to coat. Place in refrigerator for 24 hours, turning every so often. 2. Preheat grill for high heat. 3. Lightly oil the grill grate. Remove chicken from bag, discarding any remaining marinade. Grill for 6 to 8 minutes each side, or until juices run clear when chicken is pierced with a fork.

Chicken and Dumplings 1 whole chicken 1 bay leaf 2 tsp garlic salt 6 black peppercorns 6 cups of water 1 cup baby carrots 1 package refrigerator biscuits (10 – 12) Place chicken in crock pot and add everything except carrots. Cook on low for about 8-10 hours. Remove chicken and de-bone. Pour broth into large pot on stove and heat until boiling. Add carrots and cook for 30 minutes. Thicken broth with cornstarch or flour mixed with cold water. Tear refrigerator biscuits into 3-4 pieces each and drop into boiling broth, lower heat and cover. Simmer for about 5 minutes, until biscuits puff up. Add chicken and carrots, stir, and serve. Mexican Salsa Chicken 1/3 cup flour 1/8 tsp garlic powder 1/8 tsp paprika 1/8 tsp chili powder 4 boneless chicken breasts, pounded flat 3 tbs oil 1 container fresh salsa 4 oz (1 cup) shredded Monterey Jack or Jalapeno Jack cheese Combine first 4 ingredients in shallow dish or ziplock bag. Coat chicken with mixture. Heat oil large skillet over medium high heat. Cook chicken 3-4 minutes on each side or until lightly brown. Reduce heat and pour half the salsa into skillet and spoon some salsa over chicken, cover, simmer for 5 minutes. Add cheese on top of chicken and salsa. Cover until cheese melts. Makes 4 servings. Don Joses’s Beef, Shrimp, or Chicken Fajitas Marinade: 1 clove garlic, minced 2 tbs corn oil 1 tbs lemon or lime juice 1 tbs worcestershire sauce dash of salt and pepper 4-5 boneless chicken breasts, cut in strips, 2 lbs beef sirloin cut in strips or 1 ½ lbs of shrimp, shelled and de-veined 1 tbs corn oil 1 large onion, sliced 1 green bell pepper, thinly sliced 1 red or yellow bell pepper, thinly sliced 12 small flour tortillas, heated Combine all ingredients in the marinade together in a plastic container or zip lock bag, mix. Add chicken to coat. Marinade for at least 15 minutes, turning several times. Add oil to large skillet and heat on medium-high. Add chicken and saute until brown. Add onion and bell pepper and saute until cooked but slightly crisp. Serve on tortillas. Garnish with sour cream and shredded Cheddar or Jack cheese.
