- Soup and sandwiches or breakfast for dinner
- Do a little mix and match. Take some hamburger meat and add the spaghetti sauce, cook em up and put them in taco shells. Try others like chicken and chili, etc.
- chicken fettucini, chicken tettrazini, enchiladas, pork loin or roast, home made pizza, just throwing a few out there that we eat
- I shred potatoes and carrots and brown hamburger then add it all together and cook it til the veg's are done. Add salt and pepper to taste. or add browned hamburger to mac and cheese along with a can of drained corn and pork and beans
- Beef Stroganoff. If you have a package of noodles the recipe is usally on it.
- Chicken Adobo I know this seems unusual, but it is absolutely delicious! 4 peices chicken, skin off (I do 4 leg/thighs) 1 cup soy sauce 1 cup white vinegar 4 cloves garlic, minced Place chicken in 9x13 pan. Combine other ingredients, and pour over chicken. Bake uncovered at 400* for 1 hour. Serve over rice. ------------------------------------------------------------------------------------ Beef Stroganoff This is the real thing, and it's awesome! 2lbs stewing beef 1 cup flour 1 teaspoon salt 1 teaspoon pepper 1/2 veg oil 1 can beef stock 1 cup red wine 1 can mushrooms or some fresh mushrooms, sliced 1 large or 2 medium onions, chopped 2 cups sour cream Combine flour with salt and pepper. Shake beef with seasoned flour to cover. Heat some oil in a big pot and brown beef in batches. Add additional oil as required. When all beef is browned, add stock and wine to pot and scrape up bits from bottom. Add onion, mushroom and beef back to pot and move to oven. Bake at 350* for about 2-3 hours until beef is tender. (Can also be cooked in crockpot all day) Add sour cream, stir, re-heat if necessary. Serve over egg noodles. ------------------------------------------------------------------------------------ Pesto Chicken Pasta Hope this is unusual enough for you. 4 cups dry pasta like penne 2 tablespoons olive oil 4 boneless, skinless chicken breasts, diced 1 red pepper, diced 1 green pepper, diced 1 large onion, diced 1/2 cup almonds, cut and toasted 1/2 cup prepared pesto 1/2 cup grated parmesan cheese 1/2 teaspoon salt 1/4 teaspoon pepper Cook penne as usual. While penne is cooking, heat olive oil in large pan. Add chicken breast, peppers, and onion, and some salt and pepper, and saute til cooked. About 10 minutes. Set aside. In large bowl, combine cooked penne, cooked chicken and veggies, pesto, prepared almonds, and stir well. Stir in parmesan cheese, or simply sprinkle on top. Eat hot or room temperature. Can also use shrimp instead of chicken, or leave out meat completely.
- this is my favorite meal: salad with light italian dressing and grilled chicken breast or grilled veggies and grilled chicken breast. or even try cooking soup.
- How about: Beef Chuck Roast w/potatoes & carrots Beef Stroganoff over Noodles Swiss Steak Chicken a la King over Biscuits Ring Bologna or Kielbasa Pork Chops/ Pork Steak Just a few ideas~ Good Luck, your menu sounds like mine ! I run out of ideas too.
- Cajun Pork Chops 4 boneless pork loin chops 1 clove garlic, cut in half 1 Tbs. paprika 1 tsp. seasoned salt 1 tsp. sage, crumbled 1/2 tsp. cayenne pepper 1/2 tsp. pepper 1 Tbs. plus 1 tsp. unsalted butter Rub both sides of pork chops with garlic. Combine next 5 ingredients in a bowl. Press seasoning mixture into pork chops with hands to adhere. Melt butter in a heavy nonstick skillet over high heat. When butter just begins to turn golden, add pork chops. Reduce heat to medium and sauté 8-10 minutes, turning chops frequently, until dark brown on the outside and cooked throughout with Backed Potatoes
