Please share your kid approved recipes w/me...?

I have a two yr old. He's not a picky eater but I'm sure he's sick of eating the same thing over and over as I am of making it. He's not big on hot dogs or sandwiches, he loves chicken which he has a lot of, casseroles too, beef stew, spaghetti... a lot of the same stuff over and over. Can you help me mix it up by sharing some of your menus/recipes w/me. Thanks!

  1. take some bonless chicken breast cut all the fat and white crap and what not.then get a deep baking pan add some butter and some spices to it. (i used a lil seson all) the the most important add lemon pepper to the chicken before and during the cooking u can find this at sams club. if u cant find it add some peeper on the chicken with a pinch of seson all and reall lemon right on it time and temp may vary but u can tell when its ready
  2. Cooking for kids can be monotonous, They tend to like fairly simple, often bland food. Since they tend to stick everything in their mouths when they are really young I think this tendency is to keep them from poisoning themselves. Beans might be an area to explore from with so much variety available from split pea soup, bean dips, soups like Minestrone, burritos, lentils, mild chili where Mom and Dad can add heat to their liking.
  3. Homade pizzas with chicken and veggies. He can make his own! My 2 and 3 yr olds love them!
  4. I haven't met a child who doesn't like pizza. Use pita bread as base and cover with tomato paste, pasta sauce or salsa. From then on you're cruising. Add mozzarella cheese and whatever you want, peices of chicken, shredded ham, minces beef or meat balls. Vegies like sliced onions and peppers, sliced mushrooms, crushed or diced pineapple, the sky is the limit. Another favourite (we reared 5 kids on them) is meatballs. Again, you could serve them with spaghetti, pasta sauce and rice. etc Mix the mince with some mustard, eggs and bread crumba, add paprika, cumin and pepper, add salt to taste and roll them into 1 inch balls. Alternately make hamburgers out of the mix and serve them grilled or fried on a toasted bun with slad and gherkins As you can see minced meat is a god send to parents. Another suggestion, chicken schnitzels, or you could substitute chicken for slices of eggplant for a nutritious vegetarian meal. When using eggplants make sure you slice them about 1 cm thick, lay them on baking paper and sprinkle salt liberally on them and leave for 10-15 minutes. The salt draws out the bitter liquid from the eggplant. Wash the eggplant slices thotoughly and pat dry. Crumb the slices like you would regular schnitzel and shallow fry them till golden. Leave on absorbing paper to get rid of the oil but keep it warm to hot. Saute a small red onion thinly sliced and add baby spinach leaves and some pine nuts, when spinach wilts take off the heat. Serve on cocnut rice, (steamed rice is just fine too), some of the spinach mix and a good dollop of youghurt.
