- The nicest and easiest way to make baked fried chicken is to prepare some dry rub spices - paprika, garlic powder, salt, pepper, parsley - whatever spices you like (experiment to get the flavour you want) then add enough oil to the spices so that you can rub it onto the meat - then marinade this for a few hours, then bake. It won't have the same texture as fried chicken, but it will taste great. Bear in mind that baked chicken will take longer than fried chicken so be sure to use chicken pieces like wings, thighs and legs (or a whole chicken) with the bones intact, to help keep the meat moist.
- Crispy Oven "Fried" Chicken preheat oven to 375 degrees. 3-3 1/2 lb. Fryer Chicken, cut up, rinsed, pat dry. In a small microwave safe bowl, melt 1 stick (1/2 c.) margarine. In large bowl combine; 1c. flour, 2 tsp. dried parsley, 1/2 tsp. onion powder, 1/4 tsp. garlic salt, 1/8 tsp. paparika and a generous dash of pepper. Krinkle enough foil to line a cookie sheet. GENEROUSLY oil the foil. Dip chicken in melted butter then dredge in spiced flour. Place on cookie sheet, meaty side up. Bake 25 min. Turn over. Bake additional 25-30 min. Turn over. Turn oven off. DO NOT OPEN DOOR FOR 10 min. Remove from oven, place chicken on serving platter. Serves 4-6.
