How do you prepare the chicken for chicken salad sandwich?
My favorite deli had really soft chicken, mayo and celery. Did they boil the chicken to get it soft. I tried in the oven and it was disgusting. Anybody? You dont have to post a long recipe for me, it is really the question about the chicken cooking that I am questioning. thanks Such good answers, I cant just pick one. Sending to voting. - Boil it gently in seasoned water til tender. Don't over cook or it will be rubbery. Save the water created for another use (soup, stew..)

- yes ... boiling it will keep it soft. You can even add a few spices to the water (ginger is good for Chinese Chicken Salad)
- CHICKEN SALAD SANDWICHES 1 c. finely chopped cooked chicken 1/4 c. finely chopped celery 2 hard cooked eggs, chopped 2 tbsp. sweet pickle relish 1/4 tsp. salt Dash of black pepper 1/3 c. mayonnaise 3 tbsp. softened butter Sandwich bread Combine first 6 ingredients. Spread softened butter on bread, then spread salad mixture on bread and cut into desired shapes. Chill in covered container until ready to serve.
- Either poach it in chicken broth, or buy a rotisserie chicken and strip the meat from the carcass. Both are simple. :)
- yes,u boil the chicken and let it cool. Debone ur chicken and shredd it up to where u like it and add boiled (dice) eggs,mayo,chopped celery,pickle relish.. u got it

Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. - you can do a high heat grill , do this real quick and becarefull not to overcook , this willl make chicken tuff.. also try not to cut meat, just pull apart with hands, for some reason this helps keep tender.
- What makes chicken salad really delicious is to buy a rotisserie chicken. They are seasoned just right and are so tender.Add that chicken with your other ingredients. My local food market makes them everyday.
- I like to use chicken breast or tenders, and "dry fry" them on a griddle. You can use a little cooking spray if you like. I put a lid over them it really only takes about 10 minutes for tenders. They stay tender and juicy. Just make sure to start with thawed chicken, and use the lid with medium to low heat

- Try cooking a whole chicken cooked breast down in a roaster with a cover, at 325 degrees for 3 hours. Take the chicken out, turn it over and carefully cut the breast off. Mix it with mayo and finely chopped celery and let it 'sit' in the refrigerator for at least 4 hours before making your sandwich. There is a combination of things that make the chicken 'soft' and this should work if you do it properly. BE SURE to use a roaster that comes with its own lid and use that lid ... you can use foil tightly squeezed, but that will let some of the 'moisture' out of the roaster ... and ALWAYS cook your bird with the breasts DOWN to get the 'softest' (tenderest) white meat possible, either for dinner, or for making good sandwiches.
- Yeah, you should boil it with a little salt water, then cool it and cut it...then put mayonaise and celery and whatever you usually mix with chicken salad.
- The secret is to cook it just barely long enough to get the meat cooked through. That keeps it juicy and tender, not dried out and tough. Also, the quality of your chicken matters. Pay the extra for an organically-raised chicken and you will be rewarded with a chicken that tastes like chicken SHOULD taste and not like a Tyson bird (YUCK!). In my area, I buy Amish-raised chicken because certified organic chicken is difficult to find without driving out of my way. Certified Kosher chicken is also a good bet, since its raising and butchering are humane and mercifully swift butchering and processing methods, biblically-based, are used.
