Cheesy chicken and rice recipe?
Does anybody have one? I realllly want to make it.. If it doesn't need to be baked that would be the best... I was planning on using one of those chicken flavorer boxes of rice? How do I do this?

- Gross, don't do that! Here's a simple way. This would be for 1 very big appetite or 2 medium to smaller appetite people. Cut up 8-10 oz chicken breast into bite size cubes. Sprinkle w/ salt and brown them in a tbsp or so of canola oil. Add 3/4 cups uncooked rice, 1.5 cups water, and I like to add some fresh or frozen spinach as well (makes it healthier, doesn't change the taste really). Bring to boil, stir once or twice, reduce heat then cover and simmer for 15 minutes or until all water is absorbed by the rice. In a small, 1 qt saucepan, melt 2 tbsp butter. Stir in about a tbsp of white flour; when it starts to bubble (will happen fast) add a cup of milk or so. Bring up to a boil on medium heat and keep stirring periodically. Let it simmer for a few minutes while stirring until it starts to thicken. Add 2-3 oz shredded cheddar cheese. Taste. If it's too boring, add a few drops of worcestershire sauce or a small squirt of mustard. When the chicken/rice/vegetable is done, pour the cheese sauce over it. It will be delicious. Totally homemade. The cheese sauce is also good for homemade mac & cheese.

- Cheesy Chicken & RIce Casserole 4 skinless, boneless chicken breast halves - cut into bite size pieces salt and pepper to taste 2 cups cooked white rice 1 (10.75 ounce) can condensed cream of chicken soup 2 cups shredded Cheddar cheese 3 slices soft white bread, cubed Preheat oven to 350 degrees F (175 degrees C). To Cook Chicken: Season chicken with salt and pepper to taste, place in a microwave-safe dish, cover and cook in microwave for 5 to 6 minutes. Turn and cook another 2 to 3 minutes or until cooked through and no longer pink inside. Let cool. In a 9x13 inch baking dish, combine chicken, rice and soup and mix well. Top with cheese, then with bread cubes. Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is melted and bubbly and bread is crunchy. nfd♥
