meat & poultry processing licenses/permit?

My name is Brian and after being lay-off last month, I am planning to start a small business making sausages in New York City to sale at the national Asian retail stores. The spices for making the sausage will be imported from the overseas, then be used to marinate with meat purchase locally, and manufactures into yummy sausages. Please kindly advise what type of USDA or national or New York State/City Food processing licenses or permits I need in order to actualize this dream. Or the contacting agency/department which I could call and to find out more information. Thanks,

  1. if u live in the city just dial 611 its the states information hotline
  2. You have to call the FDA and USDA and they'll tell youi. But if you were making them for sale in your own store it would simply be a food license and permit,( there's a few you have to get). That's easy. But for wholesale you need a state inspector onsite at all times of production( and you have to pay him). Not easy.
