Help me make a healthy, vegetarian version of Chicken and Broccoli Casserole.?

I have a recipe my mom used to make when we were kids (before I was a vegetarian) that I'd like to try and make into a vegetarian dish that's also a bit healthier. Here is the original recipe: 1 bag broccoli florets 4 boneless chicken breasts, cooked and cubed (*I can use seitan chicken for this, I think) 1 can cream of chicken soup 1 can cream of celery soup 1 cup mayo (I could use veganaise I think) 1 tsp lemon juice 1 cup cheddar cheese So - ideas? I does not have to be vegan. I've never made a "chicken" casserole before using chicken alternative, so I'd be curious to hear feedback from anyone who has. Thanks for the input!

Vegetarian Meatless Chicken Casserole Recipe 1 1/2 big bag Nuddles of your choice 1 bag broccoli,carrots,etc (mixed bag of veggies) 1 cream of mushroom 1 cream or celery or cream of broccoli and cheese 1/2 onion 1 or 2 bags of meatless chicken strips 1/2 velveeta cheese oil spray or pam and seasonings of you chioce (I used pepper and season all) Directions Cook the noddles and drain. saute the chopped onions and veggies. add cream of mushroom, cream or celery, meatless strips, stredded cheese and saute onions/veggies to noddles and mix well. oil spray or pam your pan (oven 360*) evenly spread mixed food in the pan top it with stredded velveeta cheese cover with foil and cook for 20 - 25 minutes or til its done :)
  3. If you still want "chicken" in the casserole, I would recommend using Quorn naked cutlets. They hold up remarkably well with cooking. Instead of the condensed soups, I'd try adding some sauteed celery in with the "chicken" and broccoli and making a simple white sauce with margarine. Even if you leave the mayo it will be vegetarian, but the vegan stuff is better for you.
