How to fix chicken to not be so bland?

Tonight I am making a baked chicken breast, and all I will do is sprinkle it with mixed seasonings called "BBQ rub". The only problem is, typically when I make it, I sprinkle the seasoning on the chicken and then bake it. When it's done, the inside of the chicken still tastes kind of bland, and only certain bites that include the rub tastes good. Is there any way to fix that? Okay, what do I marinade it with?

  1. I"d marinade your chicken instead, poking it with a fork all over so the marinade gets inside. I'd let it sit for an hour or two. When you bake your chicken, I'd also put foil or a lid over the baking dish so the steam stays inside so the chicken stays moist. You can always marinade the chicken AND use a rub for even more flavor!
  2. I would just add more spices that I liked to it or use a sauce.
  3. Here's a great marinade that I've used several times. It leaves your chicken tasting amazing - and it uses pretty standard ingredients. If you don't have the dry mustard, regular bottled mustard works fine too. * 1 1/2 cups vegetable oil * 3/4 cup soy sauce * 1/2 cup Worcestershire sauce * 1/2 cup red wine vinegar * 1/3 cup lemon juice * 2 tablespoons dry mustard * 1 teaspoon salt * 1 tablespoon black pepper * 1 1/2 teaspoons finely minced fresh parsley Just mix them all together and let your chicken marinade for several hours. (This makes a lot of marinade so you may want to halve the recipe).
  4. try adding fresh bellpeppers and purple onion to sliced some fresh mushrooms over it and back with a little chicken stock
  5. You can marinate your chicken in an Italian Salad Dressing, but this probably won't be ready for tonight. Next time, here are a few ideas: -Fill a sealable freezer bag with about 3/4 cup italian salad dressing (Try 'Good Seasons') and put the chicken in it. Refridgerate (SP?) for about two hours, or you can put it in before you leave for work. -Marinate your chicken with olive oil and some Herbs de Provence (so delicious, it's a blend of many idfferent spices). Again, refrigerate for at least two hours. You could also conisder making a stuffed chicken, kind of like turkey stuffing. Also, often bland chicken is dry chicken...the juicier the chicken, the more flavor it has. Don't overcook your chicken!
