What's for supper? I have chicken and broccoli?

I don't know what to make... I have chicken and broccoli, but don't want cheesy chicken broccoli and rice casserole... Suggestions please?

Chicken and Broccoli Fettucine Alfredo Ingredients 4 boneless skinless chicken breasts 1 large or 2 small shallots, roughly chopped 3 cloves garlic, roughly chopped 2 sprigs fresh rosemary, 3 inches long 3 sprigs fresh thyme, 3 inches long 6 cups chicken stock 1 cup white wine 8 tbsp butter 8 tbsp all purpose flour 2 cups light cream 1 cup plus 1/4 cup shredded Parmesan cheese 3 cups broccoli florets, blanched Salt and freshly ground black pepper to taste 1 lb fettucine Method In a tall frying pan, mix chicken, chicken stock, wine, garlic, shallot, thyme and rosemary. Bring to a boil, cover and simmer, until chicken is cooked through, about 30 minutes. In a medium saucepan melt butter. Whisk in flour and cook 2 minutes until bubbly. Whisk in cream, and whisk in two cups of the chicken cooking liquid. Add 1 cup cheese, stirring constantly until thickened. If sauce becomes too thick, add more cooking liquid until the consistency is correct. Add salt and pepper to taste. Cut chicken into bite sized pieces and add to sauce. Add broccoli to sauce and chicken mixture. Boil fettucine in heavily salted water, with 1 tbsp olive oil, until al dente. Toss chicken mixture with fettucine and serve, topping with remaining cheese.
  6. Cook the chicken, throw some bbq sauce on top of it. Make some mashed potatoes, and steam the brocolli. You could also serve carrots too. Make a gravy with the drippings if you roast the chicken, or from the broth is you boil the chicken.

  10. Bake or grill the chicken, and steam the broccoli. You can make a simple broccoli steamer by putting about 2 inches of water into a large pot and setting a ceramic bowl into it. Bring the water to a boil. Place the broccoli crowns into the bowl. Turn the heat down to medium. Cover the pot and let that steam away for about 10 minutes. The broccoli comes out perfect - not too firm and not too soggy.
  11. Sounds great, Can I come over for dinner? Suggestions: Chicken Tacos, with just a little Cumin and salt on the chicken sauted with onions. Add some Monterey jack and lettuce.. Yum.. Cutting the chicken in small pieces and frying it up with just a teaspoon of vegetable oil will make it taste better. Once it starts to get "bouncy" just a bit, means it's fully cooked. (Or about 12 minutes on med-high stove.)

Mix soup and milk in medium bowl. Add chicken and rosemary; mix well. SPOON 1 cup of the chicken mixture into 12x8-inch baking dish. Here is another casserole recipe, it really is delicious, a simple one which has stuck with our family for generations so many people have asked for the recipe, it's different and the taste will surprise you, even if you don't care for mushrooms, (my brother hates them - we didn't tell him they were even in it for a long time or he might not have tried it but this is his favorite meal, go figure! If you have a real aversion to mushrooms, you can sub the soup for cream of chicken or even cream of celery, but it'll change the taste a little). Seemingly mundane ingredients, simple, delicious, warm, hearty food :) Hope you try it and like it Chicken Divan, (can be made with or without broccoli) You will need: Two cans of Cream of Mushroom soup, (Campbell's is best), or one family size can two packages frozen chopped broccoli, steam or cook by directions until tender approx 4 c. cooked white rice, (you can substitute brown rice, if you prefer) Cooked chicken, boil chicken thighs, approx 4 should be enough until the meat falls off the bones, de-bone the chicken and remove excess fat Curry powder, (add to taste, approx 1/2 to 1 tsp. will do but I prefer more. Just remember, the more you add, the more likely you will make it bitter, so be careful, taste often before adding.) Sharp cheddar cheese 1 block, grated (you can sub any other cheddar or grated cheese, if you haven't any sharp or prefer milder cheddar) I know this sounds strange, TRUST ME :) Mayonnaise, approx 1 cup 1 can of breadcrumbs, unseasoned is fine, or you can use your favorite, if you haven't any breadcrumbs, you can simply crumble a package of saltine crackers to use instead. salt and pepper to taste **All ingredients; mayo, cheese, crackers or crumbs, ect. can be substituted for low-fat or non-fat versions. You can even sub the chicken for seasoned or marinated tofu or other meat substitute. If someone in your family absolutely won't eat mushrooms, try subbing the cream of mushroom soup with cream of chicken, cream of broccoli, cream of celery, or other "creamed" soup. :) Once your chicken and broccoli are cooked; Preheat your oven to about 350 degrees (farenheit) Combine in a saucepan or large frying pan; cream of mushroom soup, (do not dilute with water or milk) grated cheddar, reserving a little, adding gradually, stirring until melted salt and pepper to taste curry powder, add this after the cheddar is melted and blended well with the soup. The cheese and especially curry will darken your mixture as it warms, allow this to happen before adding any extra, to taste. The color indicates that everything is melted and melding together nicely, it will turn golden/yellow and simmer. When this mixture is ready, add your cut-up or shredded and cooked chicken, mix. In a baking dish or casserole, layer the rice, chicken mixture and broccoli, starting with a layer of rice. The top, (last) layer should be of the chicken mixture. On top of the last layer, sprinkle your reserved grated cheese and layer the top with breadcrumbs or crumbled crackers, (not too thickly, or it won't toast properly, a single layer is fine). Bake in the oven at 350 degrees F. for approx. 20-25 minutes until the breadcrumbs or crackers, (lightly) are browned and the whole dish is heated thoroughly, remember, it is already cooked, this shouldn't take long. Most of all, enjoy, talk, laugh, share and have a wonderful dinner!
