Planning meals for this week... some help with side dishes please?
Every week I plan a "weekly meal plan" so I know what to buy on Monday (my shopping day) for that week. I made up my meal plan for this week, and the one in 2 weeks (we're going to Florida so I need to be prepared to go shopping the day after we get back) can I get some help on what to serve with each please? I like to change meals up a lot and I was hoping to get creative ideas! Homemade pizza Lasagna Soup (thinking chicken soup) Chicken pot pie Casserole (don't know which one yet...) Chili frito pie (got recipe from Duggars, willing to try)!! Spaghetti Minestrone Enchiladas Tacos

- Try hot salads with tasty and nutritious vegetables like asparagus and celeriac and peppers to counter all the meat and carbohydrate. A good asparagus salad Ingredients (serves 4) 2 teaspoons olive oil 2 bunches asparagus, trimmed 400g green beans, trimmed 250g cherry tomatoes 10 sprigs thyme 400g haloumi cheese, cut into 1cm-thick slices 1 lime, quartered Lime caper dressing 3/4 cup flat-leaf parsley leaves, chopped 1/2 cup mint leaves, chopped 1 tablespoon extra-virgin olive oil 1 tablespoon capers 1 lime, juiced Method Make lime caper dressing: Using a mortar and pestle or blender, pound parsley, mint, oil, capers, lime juice and salt and pepper into a thick paste. Transfer to a bowl. Heat 1 teaspoon oil in a non-stick frying pan over medium heat. Add asparagus and beans. Cook, tossing, for 4 minutes. Add tomatoes and thyme. Cook for 2 to 3 minutes or until vegetables are just tender. Transfer to a large heatproof bowl. Cover with foil to keep warm. Heat remaining oil in pan over medium-high heat until hot. Cook haloumi, in 2 batches, for 1 to 2 minutes each side or until golden. Add to asparagus mixture. Cook lime wedges for 1 to 2 minutes each side or until golden. Drizzle dressing over salad. Season with salt and pepper. Toss gently to combine. Serve with lime wedges.
- I like to have green salad and fruit salad (or cut up strawberries) available in the refrigerator, to pull out with all dinners - so GREEN SALAD and FRUIT SALAD are always available as side dishes here:) Pizza, Spaghetti, Lasagna ... all have enough carbs, so you just need a veggie with them. You could try Caprese Salad (sliced fresh mozzarella & tomatoes; with olive oil, balsamic vinegar drizzled on them; and fresh chopped basil). Garlic bread is good, but certainly not necessary (already enough carbs here) Soup: Homemade rolls or Garlic Bread - green salad - fruit salad Chicken pot pie, casserole, and chili frito pie also have the carbs built into the meal. Just do a green salad and citrus fruit salad. Enchiladas and tacos are good with Spanish rice; green salad and citrus fruit salad
- I used to do that, but since my kids grew up and moved out, I don't have to anymore. Pizza with salad Lasagne with steamed broc or asparagug soup with bread (I'm sure it's got veggies in it already, right?) Pot pie is a meal in itself freeeee-toe P'eye. Enchiladas, tacos and frito pie? Bit over doing the mexican arent' you? Lasagne, pizza and spaghetti? Then the third classification is pot pie, casserole and the soups. Really, that's not changing up meals at all. Besides that, most of your meals listed here are full one pot "slop" meals. What do you add to a pot pie or casserole? It's already in there. How about some healthy choice sausage with rice? Stir fry? Shake and bake pork chops with pasta/veg medley? Grilled teriyaki steak with roasted veggies? Don't get me wrong as I love everything you are thinking of, but it's all to ...um...same ol', same ol'.
