- Campbell's Cheesy Chicken & Rice Casserole Nutrition Information From: Campbell's Kitchen Prep: 15 minutes Bake: 50 minutes Stand: 10 minutes Serves: 4 Ingredients: 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free) 1 1/3 cups water 3/4 cup uncooked regular long-grain white rice 1/2 tsp. onion powder 1/4 tsp. ground black pepper 2 cups frozen mixed vegetables 4 skinless, boneless chicken breasts halves 1/2 cup shredded Cheddar cheese Directions: Heat the oven to 375°F. Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish. Top with the chicken. Season the chicken as desired. Cover the baking dish. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.
- CHICKEN, RICE, BROCCOLI & CHEESE CASSEROLE 1/2 c. Cheese Whiz (jar) 1 c. Quick Rice 1/2 stick butter 10 oz. frozen chopped broccoli 1/2 c. milk Chicken, cooked 1 can cream of chicken soup 1/4 chicken broth 1/2 onion Combine all ingredients. Place in casserole dish. Bake at 350 degrees for 30 to 40 minutes. OR TOO EASY CHICKEN & RICE CASSEROLE 1 10 oz. package of saffron yellow Spanish rice (Vigo) 1 10 oz. can of canned premium chicken in water 1 can cream of chicken or cream of mushroom soup 1/2 cup milk paprika *optional: onions **optional: fried fried onions **optional: cheese Cook rice as directed but simmer for 15 minutes. (When combined with the other ingredients and cooked in the oven, the rice will cook more.) Drain water from canned chicken. Combine soup and chicken in bowl. Add cooked rice to soup and chicken. Stir in 1/2 cup of milk, more or less, depending on consistency desired. Cook uncovered in a casserole dish at 350 degrees for about 20 minutes. No need to grease the dish. That's it! Serve with vegetables for a complete and quick meal. *If using onions simmer onions in butter for about ten minutes then add to bottom of casserole dish. Velveeta cheese or Cheez Whiz Parmesan cheese Italian seasoning to taste In a 9x13 inch baking dish, mix rice, cheese, onion, Italian seasoning, Parmesan cheese, and diced tomatoes. Lay cut-up chicken breast on top of mix. Sprinkle Italian seasoning and Parmesan cheese on chicken. Bake at 350 degrees for 50 mins. //////////// CHEESY CHICKEN & RICE CASSEROLE 1 can (5 oz.) chunk chicken 1 can chicken & rice soup Salt & pepper to taste 1 can cream of chicken soup 1 1/2 c. grated cheddar cheese 2 c. cooked rice 1/2 c. Ritz cracker crumbs Mix chicken, soups and rice in greased casserole dish. Bake at 350 degrees for 15 minutes. Take out and top with cheese and cracker crumbs. Place back in oven for 10 minutes. /////////// CHEESY CHICKEN CASSEROLE 1 can cream of chicken soup 1 soup can milk 1/2 tsp. salt 1 c. chopped cooked chicken 1 c. instant rice 1 c. shredded Cheddar cheese Pepper to taste Combine soup, milk, salt, chicken, and rice. Bring to a boil. Remove from heat, cover, and let stand for 10 minutes. Add pepper, then mix with fork.
