what is the best way to make chicken wings?

everytime i make chicken wings the sauce never seams to stick to the wing like in the resturants. also my wing are usually to crispy or the skins seam to rubbery.Please help my husband and i love wings but cant seem to make them

  2. You asked the right guy this question! I just made these and they are exactly like the restaurant. The trick is to take a stick of butter and melt it in the microwave. And dip each piece into it first. Then put them in the pan and baste with hot sauce, turn over and baste the other side. Keep the remaining butter. Bake them for 1/2 hour at 350. When they are done, pull them out, dip them again, baste them some more, and pan fry them. It isn't as hard as it sounds and they are reeeeeally good. Use a disposable pan, I was glad I did.
  3. I use canola oil in a deep fat fryer, cook them untill the bone at the end of the wing is showing and when you hold it out of the oil for a few seconds the skin is crisp. Place immediatly in a bowel of red hot sauce, cover with a lid of any kind and shake the bowel.The hotness of the wings is determined by the amount of butter you put in the red hot, more butter= less hot. Use about 1/2 cup hot sauce for 12 wings.
  4. Well, I won't put in a whole recipe book for this one. This is what we do . We marinate the wings in a salt water brine for several hours in the frig. The seasoning we like to use is Lawry's seasoning salt. Regular salt is fine too. Drain and season with sesame oil, garlic and pepper. Flour dredge: Use seasoning salt and some pepper. Dredge and tap off the access flour. Deep fry the wings till they float to the top. (about 15 minutes depending how much you have in fryer) Place wings on wire rack to let it drip off the access oil. As that sits make your sauce. Your favorite brand of hicory smoked barbique sauce and add honey. Put in your favorite hot sauce to your desired level of hot flavor. Place in the oven for about 20 minutes of the preheated temp of 350 degrees. Serve on a plate and enjoy.
