Chook Me!

Do you have a good baked chicken recipe?

I would like to try eating more chicken and less red meat. We always have a lot of chicken breast, but I don't know any good baked chicken meals. Thanks for the advice!

  2. You could also use legumes like beans instead of red meat. NIGELLA’S POLLO ALLA CACCIATORA 1 tablespoon garlic oil 1/2 cup pancetta cubes (optional) 6 scallions, finely sliced 1 teaspoon finely chopped fresh rosemary leaves 1 pound chicken thigh fillets, each cut into 4 pieces 1/2 teaspoon celery salt 1/2 cup white wine 1 (14-ounce) can chopped tomatoes 2 bay leaves 1/2 teaspoon sugar 1 (14-ounce) can cannellini beans, optional Put the garlic oil into a pan with the pancetta, sliced scallions and chopped rosemary and fry for a couple of minutes. Add the bite-sized chicken pieces, stirring well, and sprinkle in the celery salt. Pour in the wine and let it come to a bubble before adding the tomatoes, bay leaves and sugar. Put the lid on and let the pan simmer for 20 minutes. Drain and add a tin of cannellini beans and when they have warmed through too, you are ready to eat.

  7. No unfortunately I know nothing about baking chickens. I buy chicken breasts and grill them and add them to rice and sweet and sour sauce and I have an Ok meal in five minutes. But, chicken is better than red meat and I'm going to be watching the other answers.

  9. Yes, try my Chicken Parmesan Roll 4 chicken breasts in miracle whip, then roll in Italian bread crumbs (I usually add some Parmesan cheese to the bread crumbs, maybe some garlic powder, and Italian Seasonings). Place chicken breasts in glass baking dish that was sprayed with butter flavored oil. Spoon about 2 Tbs spaghetti sauce over each breast and bake for about 30 minutes at 375 or until juices run clear. Sprinkle each breast with mozzarella cheese and return to oven to melt cheese. Simple and easy and fast. And so good. Serve with a veggie and baked potato and its dinner! Enjoy.
  10. you don't need all that confusing stuff, dip chicken in eggs then coat with flour and bake for 1and 1/2 hours.
  11. One good baked chicken dish that is always popular at my house is a whole roasted chicken cooked in a big steak bag (be aware not to cook it at more than 200 C, otherwise the bag can melt) with potato's and carrots. Just clean the chicken and dry it with a kitchen paper towel. Season it with herbs (fresh or dryed) I use timian, rosemary or a mix of Herbs de Provance (the french blend) and salt and pepper or other season of your choice. Clean and slice carrots and potato's, either the ones for baking or the sweet ones. Put everything in the steakbag (chicken on top) and close it. Be careful not to close it to thightly because some it will bloat a bit in the oven. Preheat the oven to 200 C and cook it for an hour. It is a perfect dish to prepare because once it is in the oven you have an hour to do other things :) Buon appetito!
  12. This recipe is really worth trying: cut the chickenbreast in the lenth halfway through, fill it with tomatoes (I also like it with sundried tomatoes, mozzerella is optional). close it and brush it with pesto and than wrap the chickenbreast in parma ham. Put it in the oven at 350 degrees celcius for about 20 min.
