Healthy chicken breast recipes?
So, my mom is starting her diet or something today, which is a lot of protein, which means a lot of chicken breast. As well as other meats, but my mom seems to thinkt hat she must only eat chicken breast. I'll go along with it for a while. So, can somebody give me some healthy recipes? Nothing fried, fyi. I just need something that will taste good and be healthy. Thanks!

- Heres something realy easy, i boil the chicken breasts, its realy easy, and put some greek seasoning on them
- Thaw the chicken breasts, then pour cream of mushroom soup over them and bake them. I don't know if it's healthy but it's supposed to taste really good.

- Grill it! Grill it! Marinade in Italian dressing is how I do it. You can also cook it in chicken broth, garlic, pepper, rosemary. Baked.
- Sounds like low carb. Here are some ideas: http://lowcarbdiets.about.com/od/recipes/tp/lowcarbchicken.htm Here is a fave of mine: 4 reasonable size chicken breast 1 carton of reduced fat or fat free sour cream 1 packet of zesty Italian dry dressing/seasoning Reduced fat parmesan cheese Preheat oven to 350. Sprinkle shallow baking dish with parmesan cheese after spraying with olive oil cooking spray. Mix together sour cream and Italian dressing/seasoning. Sprinkle the top with paremesan cheese, to your liking. Bake for 40-45 minutes.
- I just made this one the other night...got it from my new Weight Watchers is 20 minutes or less cookbook. For the most part, you can eyeball it, but rub the breasts with some salt and pepper, then cook them in a deep skillet until they are browned. Set aside. Then pour a pack of fresh mushrooms into the skillet, along with some extra-virgin olive oil. Add 1/2 cup of any red wine, 1/2 cup less-sodium chicken broth, 1 tsp. thyme, and 1 tbsp. flour (preferably whole wheat). Stir until the mix thickens a little bit. Add the chicken breasts and coat with the mixture. This tastes way better than it sounds, and don't be afraid to add the thyme! It adds a really distinct and yummy flavor. I served this with some brussels sprouts in a steamfresh bag.
