Making spicy hot fried chicken wings? (Like KFC)?

OK when I say "like KFC", what I mean is...NO SAUCE! I KNOW it is possible to make hot wings where they are just plain-fried and NOT smothered in those really powerful hot sauces. I want to learn how to make the kind where the spice is in the MEAT itself. I've tried and failed a few times already; I've dumped over 5 tbsps of cayenne pepper INTO my raw wings, and let it sit overnight even - but for some reason, after dipping in batter, and frying, the spiciness never comes through. I have also tried putting tons of pepper into the batter, but it's not as spicy either. Anyone have a GOOD recipe for this?

  1. To get the spice in the meat, you could use a marinade or a dry rub. Google will bring up many dry rubs. Just adding cayenne pepper wouldn't work as well as using a dry rub. There's more to that flavor than just pepper. Adding spices to the batter will also help. Try something like, garlic salt, cayenne pepper, crushed red pepper, and ground black pepper. Maybe a bit of cumin too.
  2. You need to submerge the entire wing in a "wet" sauce. I like to use Frank's Hot Sauce. This will soak into the meat and taste great. There is one trick to cooking them though. I prefer to grill mine. Use low heat and while on the grill you need to turn the wings every 3 minutes or so. This will keep the juices in the meat and not allow it to drain out. If the juices are dripping out of the meat decrease the time between flips. Good luck.
