I like garlic, lemon anything like that simple please I won't have time to go to the grocery store, but I have all kinds of spices here. Thanks Yes bone in. Thanks for your advise. I will just play with some spices I guess.

  1. Hmm...are these bone in? Either way if your not wanting to put BBQ sauce on them, here are a couple of suggestions. One is to cheat. Go to grocery store and Lawry's make 30 minute marinades that are actually very good. They do have a garlic herb marinade, as well as a lemon pepper. Other option is to while grilling, brush with olive oil, and sprinkle some lemon pepper seasoning on the thighs. I like to soak the chicken in sweet tea overnight, then grill, sounds weird, but is very good. Basically what ever you like on your chicken, use it, can't really screw it up. If it is dried herb or seasoning, just brush with some olive oil, while grilling and season. To marinade, use the 30 minute marinades. Good luck,,
  2. Grilled Chicken Spice Paste 2 tablespoons paprika 1/2 teaspoon pepper or lemon pepper 1/2 teaspoon kosher salt or to taste 2 teaspoon onion powder 2 teaspoon garlic powder 1/4 teaspoon cayenne pepper, more or less to taste 1/2 teaspoon dried oregano 1/2 teaspoon dried thyme 3 to 4 tablespoons extra virgin olive oil 8 chicken thighs or other parts Combine all ingredients to make a paste. Add more oil if necessary. Rub all over chicken and let sit in the fridge for a couple of hours. Remove at least a 1/2 hour before grilling the chicken
  3. In BBQ contests, we marinate in a raspberry vinaigrette salad dressing and then slow smoke them. If you slow smoke them, rub mayonnaise on them before smoking - this will prevent rubbery chicken skin. You can also just grill them over high heat which will also crisp up the skin. An italian salad dressing can be used too for the marinade. Bill For barbecue recipes... http://www.bbq-book.com
