Mexican dinner night ideas?

I am cooking for 6 and am tossing up between chicken enchiladas as a main or chicken tortilla casserole, what would be better do you think and if any other ideas please let me know thanks! These are good choices for a mexican theme too?

2. I would go with the casserole because enchiladas can be messy and are probably harder to make.

5. Fajitas are always nice people like putting there own things together and many people have different tastes when it comes to mexican. Add rice and Beans to your menu and pico de gallo I worked for a national chain and we simply used wishbone salad dressing for the marinade. It's wonderful
6. Excellent choices!>=) I'd go with the chicken enchiladas,everyone usually goes for them and its not that heavy of a meal...Add some Spanish rice or rolls,even a taco salad for sides..>=)
7. I'd rather have the chicken tortilla casserole. I'm not a big fan of enchiladas or burritos:) You might have a meatless Taco Salad, for those who don't want a casserole too...... How about a citrus fruit salad with it? ... Flan and cinnamon brownies for dessert - frozen margaritas and Dos Equis beer
