  5. Listen to Serena. She knows what she is talking about. Roasting wings at high heat will smoke up your kitchen, but steaming the wings prior, will render lots of fat. Enough fat, that you can finish the wings in the oven without triggering the fire alarm. The wings will be crispy and the meat will be juicy.
