Recipes that have all or most of these foods: chicken, rice, cheese, pineapple, peppers and potatoes?
I have to an iron chef type project for my foods class. These are the ingredients: Chicken Rice Cheese Pineapple Peppers Potatoes The recipe doesn't NEED to have all of those ingredients but I get more marks if it does. TASTE is more important though, so I can win. Hehehe. We can add anything we want into the recipe.

Chicken pineapple pizza. It has peppers, onions, mushrooms, cheese, tomato sauce and what ever else you want to add; You could even sneak some oriental stir fried rice in on the pizza. Poke all the marinated chicken chunks, potatoes, peppers, onion, pineapple, chicken, potatoes, peppers, onion and pineapple keep rotating till all is used. Mushrooms would be good also. Don't pack on real tight or they will not cook between. Do it loosely. Grill over flame or on a griddle top will browned and and chicken is done. Baste with pineapple juice and soysauce every few minutes. Serve over rice with extra sauce
- I'd use everything but the pineapple to make a frittata and have the pineapple for dessert. You'd also need eggs. If you don't have those, how about a gratin?
- Spicy Chicken & Rice 1 cup uncooked rice 1/2 pound boneless, skinless chicken breast halves, cut into 3/4-inch pieces 2 medium frsh jalapeno chile peppers, seeded and minced 1 medium pineapple chopped 1 Tablespoon olive or vegetable oil 1/2 tetaspoon salt 1/4 teaspoon pepper 1/4 teaspoon crushed red pepper 1/2 pound uncooked medium shrimp, peeled and cleaned 2 large tomatoes, chopped (2 cups) Preparation: Cook rice as directed on package, keep warm. 3. Combine chicken, pepperspineapple,, olive oil, salt, pepper, and crushed red pwpper in 12-inch skillet over medium-high; heat 4 to 5 minutes, stirring frequently, until chicken is no longer pink in center. Stir in shrimp. Cook 2 to 3 minutes, stirring frequently., until shrimp are pink and firm. Do not overcook. Stir in tomatoes. Cook about 1 minute, stirring occasionally, unti hot. Serve with hot cooked rice. Serves 4.

Wild Rice and Sweet Potato Ingredients * 3 cups fat-free, less-sodium chicken broth * 1/2 cup chicken breast steamed and chopped (can cook how you want or use sauteed chicken tenders.) * 1 cup uncooked wild rice * 2 cups (1/2-inch) cubed peeled sweet potato 1 tablespoon plus 1/2 teaspoon olive oil, divided * 1/3 cup green pepper * 1/2 cup pineapple with juice. Use more juice as needed for taste. * mint springs(optional) Preparation Bring the chicken broth to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 45 minutes or until liquid is absorbed. Preheat oven to 400°. Combine the sweet potato and 1/2 teaspoon oil in a bowl, tossing well to coat. Arrange sweet potato in a single layer on a jelly-roll pan. Bake at 400° for 30 minutes, turning once. Combine rice, chicken, pineapple & juice, green peppers; gently stir in potato. Cover and chill 1 hour. Garnish with mint sprigs, if desired. Experiment with adding a little very mild cheese like fresh mozzarella. ;)
