How do you cook the chicken in the recipe for the fuji chicken salad at Panera Bread?

I have found the list of ingredients to make the fuji chicken apple salad from Panera Bread, but need to know how to cook the chicken & other ingredients to make such tender and flavorful sliced chicken!

  1. Boil it if it's boneless chicken breast, if you have bone in split chicken breasts then you can roast them at 350 F for 35 to 40 min (rub some olive oil on them before putting in the oven). Where did you get the list of incredients, I tried to find the recipe and came up with nothing?

  3. Just marinate a boneless skinless chicken breast in a citrus herb rub. Then bake it in the oven. Then when it is finished put lemon juice on it.
  4. This site is a video of the Panera dude making the salad. http://abclocal.go.com/kgo/story?section=view_from_the_bay/food_wine&id=6847203#bodyText Recipe for citrus chicken. http://www.bettycrocker.com/recipes.aspx/grilled-citrus-chicken?WT.dcsvid=MjA5NTE2NTM5NQS2&WT.mc_id=Newsletter_BettyCrocker_05_14_2009 Recipe for herb chicken. http://www.bettycrocker.com/recipes.aspx/grilled-three-herb-chicken?WT.dcsvid=MjA5NTE2NTM5NQS2&WT.mc_id=Newsletter_BettyCrocker_05_14_2009 The first recipe looks more like the one they made. Plus the calorie count is closer to Panera's. Calorie count is probably higher on the second because they use dark meat instead of breasts. Why don't you start with the first recipe and add some of the herbs/spices from the second one? If you get lucky, perhaps it will come out fairly close. If not, it sounds like one yummy recipe anyway. Sounds like a fun project. I love doing stuff like this.
