What are some easy to make meals for dinner without meat, fish, or poultry?
I am not too experienced in cooking but i am looking to try cooking for my family. since my mom and sister are vegetarians, i can not cook a meal with meat fish or poultry. i am looking for an idea that is not complicated. it does not matter if it takes a lot of preparation as long as it isn't difficult. they are NOT vegan. they just don't eat meat, fish, or poultry.

- Spaghetti- just use crumbled tofu instead of ground beef. It is amazing- add some diced tomatoes, basil, garlic, prego/ragu

You can also use the search box here on this site to find other responses from the thousands of previous questions just like this one. 2 recipes that I use: Asian Stir Fry: Drain Extra Firm tofu. When drained, cube it into 1/2" cubes and marinate it in Soy Sauce or another Asian sauce for at least 30 minutes. Heat up your choice of cooking oil in a skillet or wok. Add the tofu to the oil and cook until golden brown on several sides. Use a slotted spoon to remove tofu and place it on a plate lined with a paper towl to drain. Add Asian Style frozen Veggies to the remaining oil and sautee until cooked. Add the tofu back in and add your choice of sauce. For a Peanut style treat, add a tbsp natural peanut butter. Serve over your choice of rice or noodles. Veggie Burritos: Sautee an asssortment of vegetables. I like Red & Yellow Bell Peppers & Yellow Sweet Onions. Cook until just golden. Heat up Vegetarian or Homemade Refried Beans (or use whole black beans/pinto beans). Chop a tomato, green onions, Cilantro, and for a real treat, a papaya. For protein, you can use marinated Tofu or a meat substitute. In a vegetarian tortilla, layer beans, then sauteed veggies, then your protein, then your cold ingredients. You can add cheese, vegetarian sour cream, guacamole, mole sauce, and salsa as desired.
- Man, I was gonna say duck! Try a sampler of different vegetarian meals. Rachel Ray has these French Onion Tartlets that are good. You could combine that with a stuffed portobello mushroom (stuff it with thyme and bleu cheese or any other cheese you know they like). There are entire books written for vegetarian meals. Sweet potato hash is another good one. Will they eat an egg? Dice up a sweet potato, add some chinese five spice, onion, garlic, fresh thyme, fresh oregano. Saute then drop a poached egg on top. I just made myself hungry!
