I need something to cook for dinner for 6 grown men....?

Hubby is going on a week long fishing trip... Everyone is required to take a meal for dinner so I have to make something that is freezable and reheatable. Lasagne, Spaghetti Bolognaise and Curried Sausages are already being done Was thinking something with Chicken? A casserole of some type? I need help fast! I have to make something by tomorrow morning and it needs to be a type of one pot meal so they don't have to cook anything to go with it other than some pasta or something. HELP!! I like the beef stew idea...anyone got a CHICKEN casserole/stew recipe? Mine is with soup mix and ends up being a casserole because its so thick but my hubby hates soup mix (lentils, split peas etc..) so I need an idea for one without it that will still taste good.....

  4. Parmesan chicken or lemon chicken they are both soo sooo good.
  5. Beef stew. Brown desired amount of cut up beef in vegetable oil and worchestershire sauce. Add enough tomato juice to cover and cut up celery, onion, carrots-simmer until veggies soft. In the meantime, parboil cut up potatoes (that way they don't get overdone and mushy when reheated). Add to stew. You can add any number and type of canned and/or frozen veg as well. Used to take this on camping trips and it was easy and a big hit.

Quick and Easy Chicken Chile 5 garlic cloves, quartered and smashed 5 celery stalks, chopped 1 medium onion, chopped 3 tablespoons vegetable oil 3 (15oz) cans diced tomatoes w/onions & garlic 2 (15oz) cans black beans, rinsed 2 (15oz) cans pinto beans, rinsed 3 medium boneless chicken breasts, cut into bite size chunks 5 teaspoons Chili Powder ( McCormick is fine, Penzy's is perfect) 2 1/2 teaspoons cumin 1 teaspoon salt 1/2 teaspoon pepper 5 tablespoons tomato paste 1 can chicken broth Using a large pot over medium heat, cook the onion, celery, garlic until soften. Next, add in the canned tomatoes, chicken, chili powder, cumin, salt & pepper. Simmer until chicken is cooked through, 7-10 minutes. Finally, stir in the tomato paste, beans and chicken broth, bring to a boil, then lower heat and simmer for 20-30 minutes, stir occasionally.
  7. There is a chicken chili recipe that I like quite a bit, and you can always reheat it for later. It has onions, crushed tomatoes, and chicken breast. It also has red and yellow bell peppers, I don't know if the men would like that, if not, you can always remove them and add some canned kidney beans to make it more like a "traditional chili."   8. An old-fashioned chicken pot pie, cooked on the stovetop. INGREDIENTS: •1 stewing chicken, about 4 to 5 pounds •2 quarts water •1/2 to 1 teaspoon crumbled saffron threads, optional •2 teaspoons salt •1/4 teaspoon pepper •1/2 cup chopped celery •4 medium potatoes, quartered •2 medium onions, cut in half •2 medium sweet potatoes, quartered •1/3 cup fresh minced parsley •2 eggs, slightly beaten •3 tablespoons milk •2 1/2 cups sifted all-purpose flour PREPARATION: Cook chicken in water with the saffron, salt, pepper, and chopped celery. Cover and simmer for about 2 to 3 hours, until tender. Check occasionally and add more water if necessary. Remove chicken from broth; let chicken cool a bit then remove meats from bone and cut into small chunks. Add chicken, potatoes, sweet potatoes, and onions to broth. Cook for 10 to 15 minutes, or until vegetables are almost tender. In a bowl, combine the egg, milk, salt, and flour. Mixture will be very stiff. Blend with a wooden spoon or hands, if necessary. Add more flour if dough is sticky. Roll half of the dough out on a floured surface until thin. Cut into 3-inch squares. Add parsley to broth. (Broth should cover the chicken and vegetables. If it doesn't, add a little broth or water.) Place squares of dough, one at a time, over the chicken and vegetables, spooning a little of the broth over each square. Roll remaining dough out and repeat steps. Cover and cook for 20 minutes. Serves 4 to 6.
  9. Chicken and Sausage Gumbo I don't follow a specific recipe but here's my method and I just adjust amounts according to how much I need. Fry about 6 pieces of bacon. Remove from pan and drain. To drippings add an equal amount of flour and cook on medium heat, stirring constantly to form a roux. Add diced onion, celery, and bell pepper and cook with roux Add some chopped garlic when onion is done. Add chicken broth and/or water and a half to a whole beer to roux and bring to a boil. The roux will reach its full thickening power when it boils. Add diced chicken and smoked sausage to boil and cook until done. Season with Cajun seasoning, salt, pepper, oregano, garlic powder. You can add anything you want, and make as thick as you want, any kind of vegetables, tomatoes, rotel, corn, okra. I like to add couple cans of vegall, diced tomatoes and corn. Crumble the bacon and add back in. Serve with rice and thick crusty bread.
  10. I would make a big roaster pan full of boneless pork chops and potatoes almost like scalloped potatoes. Don't forget to add swizz cheese on top and sage and dill in the whole mix for flavor! Once it's made you can put the mix in air locked containers, put in the cooler until they're ready to eat it, when ready throw it in tin foil, throw on the grill to heat. You'll have meat and potatoes all in one just like the men like.
