  1. This is how I do it Breaded baked chicken Set up: 1/2 cup flour seasoned with a pinch of salt and a pinch of black pepper on a plate 2 large eggs, whisked with some vermouth, vodka, milk or water in a bowl 2 cups panko breadcrumbs with a big pinch of salt, black pepper, Italian seasoning and grated Parmesan on a plate Method Heat oven to 375. Drizzle 2 tablespoons of vegetable oil on a baking sheet with sides. Rinse the chicken with cold water and pat dry. Remove the tenderloin and pound the breasts to an even thickness. Dust lightly with seasoned flour, float in the egg wash, coating completely, then press into the panko breadcrumbs on one side, flip and press the panko into the other side, make sure it is completely coated. Place the chicken on the baking sheet and then flip over so both sides have some of the oil. Bake in the hot oven, 18 minutes, flipping half way through the cooking time
  2. You can soak in buttermilk for a few hours, then bread. Or you can soak, bread, dip in beaten egg, bread. Or you dry the pieces really well, coat in flour, dip in beaten egg then into bread crumbs. All of these methods have worked for me. I don't suggest a double dip in egg because I think it makes it almost like an omelet-wrapped chicken. Bake at 325 until juices run clear. I've also rolled the chicken in Parmesan cheese then baked. Pretty tasty if you're trying to watch carbs.
  3. 6oz Fresh White Breadcrumbs 2tble Sage and Onion Stuffing Mix 1 Chicken Oxo cube Melted Butter Mix together breadcrumbs, stuffing mix and crumbled Oxo. Remove skin from chicken and dip in melted butter, then roll in crumbs. Oven bake Gas 5 for approx 45 mins. Easy and delicious
  4. Ok you asked for easy and quick and this will definatly fit that bill! For wetting the chicken, I use light olive oil that I like infuse with garlic just put minced garlic in the oil and pop in the microwave for about 30 seconds while you prepare the the breading and chicken. For breading. I use what ever I have available. Crackers, Potato chips and Croutons are my favorites. Just crush them up. I then mix in some parmesean cheese and seasonings to the breading I like to cut my chicken into either chunks or strips to make the cooking time go even faster. Dip the chicken in to the olive oil then roll in your crumbs. Bake at 350 for 20-30 min, depending how big of chicken pieces you have. Enjoy! Happy Eating!
