Cheesy chicken and rice casserole question?
I'm making a cheesy chicken and rice casserole for my neighbor who is recovering from surgery. Usually I make it with whole breasts on top. They have a family of 4 and I just realized I only have 2 chicken breasts (they are large though). Is there any reason I can't cut the chicken in to bite size pieces to stretch it? What do you think?

- Yeah, cut it up. It'll be easier for you neighbor to deal with, too because they won't have to cut it up.

- Cut them into strips. Really it will seem like just as uch chicken and feed them just as well.

- Oh yes, please dice it up. It'll mix in well and that way everyone gets some chicken.
