How to grill chicken on either a frying pan or oven?
I have 1.6 kg of chicken breast that I'd like to cook right now, and all the recipes I have for this week call for grilled chicken breast. Can I just bake it (at what temperature?) or is it better to put them in a frying pan?

- baked will be the closest to grilled. place on a rack over a pan. bake at 350* about 20 minutes or till internal temp reaches 170*
- I'd assume that if you weren't wanting shredded chicken to use in recipes and really wanted "grilled chicken breasts" whole, you'd get more flavor and even a slight smoky taste from cooking them in a pan with a little oil on the stovetop than just baking them. You can "finish in the oven" after you've browned both sides in the pan if you want a really even heat for the last few minutes of cooking (as long as your pan is oven-safe of course). If you do bake them though, you'll probably want to bake not longer than about 17 minutes at 375 unless the breasts are really thick, and to keep them from getting too dry on the surface, you might want to coat with a little oil or dry rub or marinate first. (The breasts of chicken are very delicate protein so will get overcooked quite easily and taste "dry.") To cook them in a pan simply, follow a recipe like this... I'd just use salt and pepper, or perhaps a premixed "grill seasoning" for chicken too: http://rouxbe.com/cooking-school/lessons/173-the-water-test-heating-the-pan http://rouxbe.com/cooking-school/lessons/175-adding-ingredients-to-the-pan HTH, Diane B.
