Seeking Chicken Salad recipe - no mayonnaise?

I'm looking for a chicken salad recipe that does not contain mayonnaise or Miracle Whip. Many years ago, I attended a luncheon, and a lady brought chicken salad. Since I am unable to eat mayo, I passed until she convinced me that there was no mayo since she was allergic. This salad had chicken, grapes, nuts, etc. I think the dressing was some type of fresh whipped cream? Anyone with any ideas or recipes?

  1. The textures of the nuts,grapes and chicken are great....yogurt...just a dab or two to bring it all together.make the yogurt savory with some S&P .& minced onion
  2. Sounds like a Waldorf Salad with yogurt instead of mayo. According to the American Century Cookbook, the first Waldorf Salad was created in New York City in 1893, by Oscar Tschirky, the maître d'hôtel of the Waldorf Astoria. The original recipe consisted only of diced red-skinned apples, celery, and mayonnaise. Chopped walnuts were added later to this now American classic. Some prefer their Waldorf salad made with yogurt, instead of mayo. Having had this salad both ways, I fall firmly in the mayonnaise camp. But feel free to substitute yogurt for the mayo if that's your druthers. 1/2 cup chopped, slightly toasted walnuts 1/2 cup celery, thinly sliced 1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins) 1 sweet apple, cored and chopped 3 Tbsp mayonnaise (or yogurt) 1 Tbsp fresh lemon juice Salt Pepper Lettuce In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce. Serves 2.
  3. It was indeed probably the sweetness of the yogurt you are remembering. Though the key is to put just enough! Remember you can always add more yogurt, but you can never take away. So be careful. :)
  4. You're right it was made with real whipping cream. It's shredded cooked chicken, I season mine with salt as it cooks. diced grapes, red or green, red looks prettier diced celery chopped walnuts 1 small carton of real whipping cream, beat until stiff and stir into chicken mixture Good luck!
