What do you do with left over rotisserie chicken?
I like to buy rotisserie chicken from my grocery store and use it in casseroles, mexican, etc as a short cut. Takes less time than making chicken from scratch. Does any one else do that and if so, do you have any good recipes that you use the rotisserie chicken.

- sometimes i make chicken salad with it. to one cup of chopped chicken i add 1/3 cup mayo of choice, 1 tbsp honey, 1/4 cup chopped celery 1/8 cup chopped sweet onion. i mix well and then chill it. it is good on crackers, in wraps or pita bread too.

- boil it a little, pull all the meat off and make chicken soup. or take the meat off and make chili. or make a tomato/chicken stew that is my own private recipe.
- i'm sure that there are many of us. i sometimes buy rotisserie chicken and immediately rip it apart and de-bone it and prepare it for later meals. i use for things like enchiladas and burritos. easy to stir into some sort of pasta and sauce. make fried rice. possibilities are endless.

- Oh I love rotisserie chicken! I sometimes recook it and put some gravy on it. Or I put it in a sandwich with mayo, lettuce, and other fixins. I also sometimes chop it up and put it in a salad. yum!

- You can shred the leftover chicken and put it in a salad with bleu cheese and toasted pecans. Make a quick chicken noodle soup with a can or two of chicken broth, leftover chicken meat, egg noodles and diced carrots and celery and poultry seasoning. Chop the leftover chicken and blend with mayonnaise, tarragon, diced onions and celery and a little dijon mustard for a delicious chicken salad sandwich. Heat the chicken with Mexican seasonings (chili powder, cumin, garlic and onion powder). Use it for taco fillling with shredded lettuce, chopped tomatoes and shredded cheese.
- Just buy them one at a time and there are rarely any leftovers.
