Oven baked chicken and potato..what temperature to cook it under?

Okay, so I found this recipe online for an oven baked chicken and potato dinner. The only problem I have is that it tells me to preheat the oven at 400 degrees, but then in the directions after that it gives you a different temperature. Here are the exact directions: "HEAT oven to 400°F. Place chicken and potatoes in 13x9-inch baking dish. TOP with dressing; sprinkle with cheese and seasoning. Cover. BAKE 1 hour or until chicken is done (165ºF), removing foil after 30 min." What I'm thinking is that I have to just bring down the temperature to 165 when I'm ready to bake the food. Am I correct about this? I don't want to burn the food. Also, I looked at different recipes online for the same dinner and they give me different temperatures to cook it under. Some say 165, some say 180, and they all say to cook it for one hour. Which temperature should be just about right? Thank you in advance.

If your oven tends to cook faster then I would turn down the temperature to cook but I myself would cook it on 325 or 350 degrees and insert a fork into the chicken to make sure it's done and the potatoes as well. I cook chicken and potatoes regularly and they are good but I do it this way: cut med. potatoes in half place chicken on top of potatoes put a slice of butter on each potato add jalapenos If desired cook until done at 350 degrees.
  2. cook until 160-180 is the internal temp of the chicken not the oven temp if you use a meat thermometer to check if its done. usually cook chicken at 350 degtrees for an an hour

Hi~ , You are correct in thinking that you should turn the heat down after the stated time, I would cook it 180 degrees mark six . weigh your chicken and give it 20 minutes per pound in weight + 20 minutes 'for the oven' . This means that for a 3pound bird you cook it for 3times twenty minutes = 60 minutes + 20 minutes more 'for the oven which is 80 minutes in all. For this amount of time I would not put the foil on at all unless the bird was getting too dark. I would also leave putting on the cheese until the last half hour. that way you should get an even coloured chicken and your potatoes will be done. Don't forget to baste your bird about every twenty minutes to half an hour. When you take the chicken out the oven,let it rest for 20 minutes, this will allow the bird to relax and the juices to reform throughout the bird keeping it moist. To test if it is done, pierce it with a skewer at the fattest part and if the juices run clear it is done. Any sign of blood put it back in for a while longer. I hope this helps All the best. Rab.
