- Get a jar of garlic curry from an Indian market or a good ethnic section at the grocery store and mix it with a little mayo and the chicken and maybe some frozen peas, chopped bell pepper, onion, celery and carrot. Makes good lettuce wraps. Or do them same but skip the curry and just use a little rotisserie seasoning for a traditional chicken salad.

One big can of white meat chicken, garlic and chive philadelphia brand cream cheese, (enough to give it the consistency you like - about 1 tub), about two tablespoons of mayonnaise, diced onions and celery to taste. Sounds gross, I know, but it is de-lish.
- I love mine w/ grapes (cut in 1/2, so you can stab them with a fork), toasted almonds, and some dill. Yummy!! And use a sweet onion, or a red onion... oh, and before you cook the chicken, try marinating it in italian dressing, or oil and a bit of balsalmic vinger, and some other spices tossed in for good measure!

- Mmmm chicken salad..healthy and yummy :) When I make my chicken salad I just put about 2 cups of lettuce in a bowl with these chicken strips that I buy from costco.. their like chile&lime or something, and then I put a little bit of ranch dressing on top.

Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly. To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

- I have a great recipe for you, called "Sassy Chicken Salad." :) I found it on a card in the packaging of the canned chunk chicken breast sold at Costco. I love this recipe because it's super easy to make; it tastes delicious & refreshing; and it is very healthy. I hope you like it!! SASSY CHICKEN SALAD 1 can (10 oz.) diced tomatoes & green chiles (drained) 1/2 cup light/reduced fat mayonnaise 1 tablespoon honey 1 can (12.5 oz.) chunk chicken breast (I use Kirkland, the Costco in-house brand) 1 cup celery, thinly sliced 1 cup grapes, halved (any grape type is fine) 1/3 cup toasted pecans, chopped In medium bowl, combine tomatos & chiles, mayo and honey. Then stir in chix, celery, grapes & pecans. Cover and chill. Serves approx. 6.
