what is a good cheese to cook with? (melting it?)?

I like to make mac and cheese by simply taking hunks of velveeta and melting it onto cooked noodles. while that is very yummy, velveeta is very sticky in gluey, not just in your mouth, but in the pan and basically any other container. I would like to experiment with my own recipe for a broccoli rice chicken cheesy casserole, but the cheese I am used to using is that velveeta, and I havent yet tested it in an oven baked dish. so, what would you/do you use? thanx in advance!   2. I make up a cheddar sauce to begin with and top that with some grated tasty. It is the best way to enjoy the two tastes separately as when you combine them you will get a taste like neither.
  3. Velveeta is not cheese, it is cheese food, which is a code name for a barely edible material. A very distant relation of actual cheese. You might want to taste Emmentaler, Jarlsberg, Cheddar, Fontina and Scamorza. Use the one that you like best - these are all different but can nicely be used in a casserole. Experiment - they cook a little differently than that V-word stuff.
  4. Monterrey Jack with milk works well and also Gruyere Cheese would work
  5. Cheddar & Jack is good. All the others are a major pain in the "butt" to clean up.

Make a cheese sauce, This recipe will make about one cup. 1 tablespoon butter 1 tablespoon flour 3/4 cup milk 3/4 cup shredded American or Cheddar cheese A dash of pepper In a small saucepan melt butter, stir in flour, milk, and pepper. Cook and stir over low heat and bring just to a boil, add cheese and cook and stir until hot.
  7. Well, first of all Velveeta is a poor excuse for "cheese"...try a good melting cheese instead. Ingredients: 4 skinless, boneless chicken breast halves 1 pound broccoli florets, cooked 1 (10.75 ounce) can condensed cream of mushroom soup 1 tablespoon mayonnaise 1 cup shredded Cheddar cheese 1 cup dry stuffing mix Directions: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender. 3. In a small bowl mix together the soup and mayonnaise. Set aside. In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30 minutes.
