Chicken Casserole?
Does anyone have a recipe for a Chicken Casserole that has rice, broccoli, cheddar cheese, ranch dressing in it?

- Is this it? CHICKEN AND BROCCOLI CASSEROLE 2 (10 oz.) frozen broccoli 1 can Cream of Chicken soup 1 can Cream of Celery soup 1/2 c. grated Cheddar cheese 1/2 c. crushed Corn Flakes 1/2 c. Hidden Valley Dressing (Ranch & Bacon recommended) 1/4 c. Parmesan cheese 3 c. chicken, cooked Cook chicken ahead of time, cut into chunks. Cook broccoli. Place drained broccoli in bottom of greased 9 x 13 inch baking dish. Then layer chunk chicken on top of broccoli. In a separate bowl mix together 1 can of chicken soup, 1 can of celery soup, and 1/2 cup of dressing. Pour this mixture over chicken. Now sprinkle on 1/4 cup Parmesan cheese and 1/2 cup of Cheddar cheese. The last thing to go on top is 1/2 cup crushed Corn Flakes. Bake at 350 degrees for 25 to 30 minutes. Serves about 6.

- While this recipe doesn't have rice, broccoli, or ranch dressing in it, it's quite yummy! Chicken & Vegetable Scallop 2 cups cubed cooked chicken 1 package (10 oz.) frozen corn, thawed 1 package (10 oz.) frozen peas, thawed 2 tbsp. butter or margarine 2 tbsp. chopped onions (although I always us an entire onion) 2 tbsp. flour 1/2 tsp. salt 1/4 tsp. freshly ground pepper 1 cup chicken broth1/2 cup milk 2 eggs, beaten 1/4 cup seasoned bread crumbs 1/4 cup grated cheddar cheese 1. Preheat oven to 350. Combine chicken, corn & peas in a 13x9x2-inch greased baking dish. 2. In a medium-size sauce pan, melt butter over medium heat. Add onion and cook until soft, approx. 3 minutes (more for the whole onion). Blend in flour, salt, and pepper. Cook 1-2 minutes without browning. Gradually whisk in broth & milk. Bring to a boil and cook, stirring constantly until thick & smooth. 3. Remove from heat & stir in eggs. pour sauce over chicken mixture. 4. Combine bread crumbs & cheese in a small bowl and sprinkle on top of casserole. Cover with foil. Bake 20 minutes. Uncover and bake 10 minutes until lightly browned on top.
- AMISH CHICKEN CASSEROLE 8 oz broad egg noodles 1/2 cup butter 8 oz fresh mushrooms, slice 1/3 cup flour 2 cups chicken broth 1 cup milk salt and pepper, to taste 1/3 cup freshly grated Parmesan cheese 2 cups cooked chicken, cut in cubes generous pinch of rubbed sage Cook noodles as directed on package. Melt butter and cook mushrooms in a large skillet until lightly browned. Stir in flour and blend in with a fork or slotted spoon. Stir in milk and broth and seasonings; whisk sauce constantly until thickened. Combine sauce, noodles and chicken. Adjust seasonings to taste. Place in a 2 quart casserole dish. Sprinkle top with Parmesan cheese and bake at 350°F for 30 minutes.
