Does AnyBody Knows How to Make the Sweet Black Sauce for Indonesian Grill Chicken, Fish, Squid, Prawns??

- No, nobody knows. This is an ancient recipe that has been passed from daugher to daughter and has never been given to "forienghers" Any other responses are liars, Well, that's what my dyslexic mother told me. Hai!
- *Bajak Chili Sauce - (Sambal Bajak) Condiments Sauces Indonesian Indonesia Asian Oriental Indonesian Ingredients : 8 red chilies seeded and sliced 1 tsp dried shrimp paste (terasi) toasted 1/4 tsp grated nutmeg 3 garlic cloves peeled and sliced 6 shallots peeled and sliced 1 tsp salt 1 1/2 tsp chopped palm sugar 2 tbl oil 2 salam leaves 2 lemongrass stalks bruised 1/2 inch galangal (laos) peeled and sliced 4 tbl tamarind juice Method : Grind with a mortar and pestle or blend the first 7 ingredients very finely. Heat the oil over medium-high heat. Saute the ground ingredients along with salam leaves, lemongrass and galangal. Stir it frequently until the mixture changes color and becomes very fragrant. Lastly, pour the tamarind juice and let it simmer for about a minute and then leave to cool. Remove salam leaves, lemongrass and galangal before serving. - 3/4 cup black cherry soda 1 can (17 ounces) bing cherries, drained 1/4 cup dry red wine 3 tablespoons cherry jam 2 tablespoons lemon juice 2 tablespoons butter 1 tablespoon sugar 1 tablespoon cornstarch 1/2 teaspoon ground cinnamon salt and pepper to taste PREPARATION: Combine 1 tablespoon of wine with the cornstarch and mix until it forms an even paste. - Black Sauce 1 c Worcestershire sauce 1 c White vinegar 2 tb Brown sugar 2 tb Fresh lemon juice 1 tb Plus one tsp. Ground pepper 2 Cloves garlic, minced 1/2 ts Ground Allspice Combine the ingredients together in a saucepan and heat over medium heat. Simmer the mixture for about 10 minutes Don't know if this is the one you want, but it is a good sauce.
