If I can't grill chicken on the grill, what is the next best way to cook it? for Mexican gumbo. boil?, bake?

I'm making Mexican gumbo for superbowl. It's snowing outside, so I can't use the grill. I don't know how else to cook it to get the same texture and taste. Please help

1. You can get a broiler pan, or you may have one already in your oven. Put the chicken on the broiler tray, which is a large metal tray with another slotted tray on top. It allows the grease to drain threw into the other ray. It simulates a grilled effect. Any how you can still cook the chicken in the oven on the broiler setting. You could also go to any larger food store and in the baking isle near the seasonings they sell a product called liquid smoke, follow directions on bottle. But what it does is give it a grilled taste or smoked taste. Good luck at the Superbowl! sounds like good eating! PS.You can use a large metal tray instead of the broiler pan.Cookie sheets tend to spill the grease over the side, causing smoke to fill up in house. So a tray with deep sides.
