What side dish should I make for my chicken casserole?
Today I'm making white rice with chicken Cheddar cheese (melted) and broccoli. I don't know what side dish to make. I want something SIMPLE and EASY and FAST. Help me out, what would go good?? Baked potatoes? Some sort of noodle? I don't know, help me out.

- I thought the point of a casserole was that you didn't have to make a side dish? I'd go with a simple green salad or make dessert instead! I hope it is as delish as it sounds! enjoy!
- You've already got protein, grain/carbs, and vegetable, so i'm not sure you need anything else. You should use brown rice, though. I think you should cook the chicken with the cheese on it, and have the rice on the side (flavor it up with some lemon and herbs) and have the broccoli also on the side. Or make it into a casserole.
- I would have a lettuce salad ..or just garlic toast.
- You don't need anything else. I would add some crusty bread & a tomato/cuccumber salad and that's it.
- You already have starch, protein and veggie. If you must, round it all out with a nice salad. Or, you could add a lot of veggies to the rice to make a more interesting pilaf. Sauteed mushrooms, onions, scallions, peas thrown in at the last minute, things like that. Use a little lemon juice in place of water or stock when you cook the rice for a lemon rice. Glazed carrots would be a good side, rather than adding another green vegetable.
