BBQ Chicken?
I bought bone in chicken breast for a barbeque tomorrow and I was wondering if anyone can share fool proof recipes. Looking for something that includes ingredients you'd have laying around the kitchen and preferably a marinade. Thanks!

- Well Firstly a marinade is very easy. If you have any oil based salad dressing in your fridge then use that. All marinades are basically oil based so a salad dressing like "Italian" would work very well. Now for the second part of your question on how to cook a chicken breast properly it is easy really if you are using a propane style BBQ then just turn on one side of your BBQ and cook the chicken on the side that the burner is off, this is called cooking with radiant heat. You have to close the lid and check back in about 12 to 15 minutes and then you can baste the chicken with the marinade. Then eat and enjoy!
- No need to marinade bone-in chicken, add your favorite sauce in the last 5 or so minutes of cooking so it won't just burn
- Any Italian dressing (fat-free or otherwise) kicking around? Marinate the chicken breasts, covered, overnight in that. You didn't state if you had boneless, skinless breasts--and if you do, pound them out first. (Cut off any thin edges as they will burn or dry out.) If not boneless/skinless, loosen the skin (or take it off) and bathe with your hands the breasts in the dressing...underneath the skin...and marinate, overnight and covered, breast-side down. Always use enough marinade to cover (or in the case of boneless, have the memory and/or time to flip them over). You can also apply the same principles with a teriyaki sauce. (I prefer Kikkoman's to the new, thick sauces out there. You may not have it on-hand, but I usually do, so....) Whatever you do, hope you have a finger-lickin' good barbeque with a lot of fun and laughter!
- BBQ Chicken Salad INGREDIENTS * 2 skinless, boneless chicken breast halves * 4 stalks celery, chopped * 1 large red bell pepper, diced * 1/2 red onion, diced * 1 (8.75 ounce) can sweet corn, drained * 1/4 cup barbeque sauce * 2 tablespoons fat-free mayonnaise DIRECTIONS 1. Preheat grill for high heat. 2. Lightly oil grate. Grill chicken 10 minutes on each side, or until juices run clear. Remove from heat, cool, and cube. 3. In a large bowl, toss together the chicken, celery, red bell pepper, onion, and corn. 4. In a small bowl, mix together the barbeque sauce and mayonnaise. Pour over the chicken and veggies. Stir, and chill until ready to serve.
