what are good healthy chicken recipes?

i checked online but they only gave chicken only, waht is a good sidedish? all i know is one will be rice with melted cheese with steam brocoli but what else i can do with chicken?

  1. easy to adjust according to how many people you are feeding. place boneless chicken breast seasoned to taste in a pan with a very small amount of olive oil in it. Be sure both sides are coated. Bake about 45 min or until done. You may need to cover it to keep it from browning too much in the last 15 minutes. depends on which rack you put it on in the over. while the chicken is cooking peal potatoes for how many people you are feeding, cut into small pieces and boil until done. mash the potatoes as you usually would. I love adding a small turnip to mashed potatoes. Gives then a wonderful lite flavor no one will be able to tell what it is. Its delicious. clean a pound of mushrooms and slice, put them in frying pay with 1/4 cup real butter, one onion chopped and 1/2 cup white wine. Saute until done. Remove chicken from the oven, place 1/2 of breast on top of dollop of mashed potatoes, cover with your cooked mushrooms. Repeat for each person eating. Delicious....healthy simple meal.

This is my favorite chicken meal Baked chicken, served with broccoli, carrots, and brown rice Chicken: 3 chicken breasts in a baking dish add a little oil, and 1 cup water add garlic (minced) and onion (I normally cut the onion in slices and lay the slice on each chicken breast) season with salt, pepper, paprika, turmeric, parsley, rosemary, and a little sage bake uncovered for 30 minutes on 350, then cover and cook for 1 hour on 275 broccoli and carrots: bring salted water to a boil boil chopped carrots for 15 minutes boil broccoli for 2-3 minutes drain water add about a tbsp butter, salt, pepper, and mint to the veggies, toss to evenly coat and serve rice: cook brown rice as stated on package saute` onions, green bell pepper, and red bell pepper, in a little olive oil, until softened slightly mix in with rice and serve.
  4. chicken is such a versatile meat that it goes with most other foods and benefits from being seasoned with many herbs and spices. here is one of my favourites. steamed chicken with coconut sauce. serves 4 people. 1lb boned diced chicken meat. breast looks best but thigh (leg) has more flavour. 1 tbspn light soy 1 tbspn rice wine 1/2 teaspoon ground sechuan pepper 1 tspn sesame oil. put all the above ingredients in a bowl , mix around to thoroughly coat the chicken and cover with cling film. leave for 30 mins minimum.then steam the chicken pieces and add to a sauce made from: 400ml tin coconut milk 1 1/2 tbspns red curry paste. 1 tbspn soft brown sugar 2 tbspn light soy. combine all ingredients , place in a pan on medium heat and simmer for 5 mins. pour over chicken and serve with spring greens, bok choi , spinach or similar.
