What are some good and healthy chicken alfredo recipes?

Ingredients 3 boneless chicken breasts 8 oz. cream cheese 8 oz. cup of butter 8 oz. cup parmesan grated cheese 1/2 cup milk salt & pepper 1 Ib fettucine vegetable oil for frying Directions Cut chicken into strips and season generously with salt and pepper. In a large frying pan, heat about 1 tbsp of oil and place in chicken taking care not to overcrowed the pan. (if necessary, prepare in 2 batches) and fry until fully cooked. At about the same time that the chicken is started, begin heating the butter and cream cheese in a medium sauce pan. When the cream cheese is soft, add the parmesan cheese and milk and stir until smooth. Cut the chicken into pieces and stir into sauce, then heat to a boil stiring frequently. Add salt to boiling water and stir in pasta. Boil until tender stiring frequently so the pasta doesn't stick. When everything is finished. plate the pasta and spoon sauce over the top.
  2. proper alfredo = NOT healthy! Make sure you start with skinless, boneless chicken BREAST, and then make your alfredo sauce using lighter ingredients...like fat-free half and half, instead of cream. Light butter/margarine, instead of real butter. Maybe half the cheese? Use whole grain pasta, instead of durum. try grilling the chicken over smokey wood for more flavor...or would that detract from the sauce? Try both ways.
  3. Alfredo is not and never will be healthy. It's thick, creamy, buttery, cheesy and super high in fat content.
