How to make boneless buffalo chicken wings with ground chicken.?

Let's say I want to make enough for at least 3 people. I want to have the same quality as the restaurant quality boneless wings.

1. Ground chicken?? eww..why?! Your best bet is gonna be to make meatballs with it and cover them in buffalo sauce....I think... To get restaurant quality, use cut-up chicken breasts...
2. Make your ground chicken into little boneless-wing-shaped "meatballs." Freeze until firm. Bread or batter them and fry them until fully cooked. Add Buffalo sauce. Serve.
3. Why would you put your chicken in the ground and i never saw a boneless chicken walking around
