What can I substitute for poultry seasoning?
I want to make a cornbread dressing, but I don't have any poultry seasoning on hand. What other spices should I use, or will it just be ruined? I do have sage, and thyme, but no marjoram.. Also, what are some good meals to have with cornbread dressing? Thank you!

- My poultry seasoning bottle says it includes: sage, thyme, rosemary, marjoram, black pepper, and nutmeg. My nose says that sage is the main ingredient. So, I would say sage and thyme definitely. Salt and pepper, of course. Good meals would be baked or roasted chicken, or pan fried pork chops, or chicken fried steak, or baked fish... each of these served with cooked veggies of your choice, maybe a salad or slaw.
- I usually put basil or oregano in everything. It tastes just as good. You can add seasoned salt, but not too much or it will taste like pure salt.
- I'm in Switzerland and they don't sell here the American style poultry seasoning that is a must for Thanksgiving. So when I make Thanksgiving dinner here, I use a mix of dried herbs: sage, margoram, thyme mostly. I got the inspiration from this: http://southernfood.about.com/od/seasoningrecipes/r/bl30420m.htm You can add a little rosemary too, it's very nice. If you don't have marjoram, I would try just a little oregano in it's place. Or just leave it out, I think that the main thing with poultry seasoning is the sage.
