VERY easy casserole ideas?

My sister is having a baby soon and to make things easier for her a group of friends is getting together to make some meals for her. So what I need is some very easy recipes in which I can use most of the ingredients in several of the meals (chicken/hamburger/veggies) and recipes that can be frozen so all she needs to do is pop them in the oven. Oh thank you for the crockpot tip! Crock pot recipes too please! I can't believe I didn't think of that!

  2. Lasagna freezes well. I just have two of us in my household, so I make a large baking dish with lasagna and then portion it and freeze it in batches just enough for two. It takes a little effort to make, but if you want an easier version use barilla no boiling required lasagna noodles.   4. Also, if she has a crock-pot, you could just assemble all the ingredients in a plastic bag so all she has to do is plunk them in the slow-cooker in the morning. You can make a really easy enchilada casserole by cooking a few chicken breasts and chopping them up, mixing them with a few cups of brown rice, 2 cups cheddar cheese, a can of diced tomatoes with chilies (drained), a can of black beans (rinsed and drained), 1/2 small diced yellow onion, 1 tablespoon garlic powder, 2 tablespoons chili powder, 2 teaspoons salt, 1 teaspoon black pepper. Mix all of this together in a large bowl. You will also need 12 corn tortillas and one large can of enchilada sauce (red or green). Dip the tortillas in the sauce and layer 6 in a 9X13 pan. Top with half the chicken/rice mix. Layer the other 6 and top with the rest of the mix. Top the casserole with the rest of the enchilada sauce and more cheese, if you want. Bake 40 minutes at 350, or until the edge are bubbly. Very easy, very good! I also like sauteing veggies (like squash, onion, garlic, bell pepper, mushroom, broccoli) and mixing it with a jar of pasta sauce and 1/2 box cooked ziti. Take a large container of cottage cheese and mix it with 2 eggs and 1 1/2 cup of mozzarella and 1/4 c parmesan. Layer 1/2 the ziti in a 9X13 and top with 1/2 the cheese mix -- repeat. Top with another 1 1/2 cups cheese and bake 45 min at 350, 'til bubbly. You can make lasagna just like this, too, but I'm a big fan of ziti. Throw in some hamburger for protein. My husband and kids love this crockpot recipe.... 2 pounds bneless, skinless chicken breast cut into bite size pieces 1/2 stick butter 4 oz cream cheese 1 can chopped green chiles (if you don't like them, I swear you will in this recipe) 1 package Italian salad dressing mix 1 can golden mushroom soup (cambells) You can also use cream of mushroom, but golden mushroom is better 1/2 cup water (I use 1/2 cup of chicken broth) Place chicken in slow cooker. Combine all ingredients except water. Mix all other ingredients (except water) and spoon over chicken. Pour water (or chicken broth) over top. Do not stir Cover and cook on low for 6-8 hrs or high 3-4 hrs Serve over rice or egg or fettucine noodles (Spinach fettucine noodles is REALLY good with this and adds color to make it prettier) King Ranch Chicken Casserole is very good also. I can't find my recipe at the moment but I'm sure it's on the internet somewhere. Taco Soup is also very easy and very good...hold on lemme get the recipe. I can't find my personal recipe but here is one VERY similar. Never put green chiles in mine.... 1 pound lean ground beef 1 can (15 ounces) kidney beans 1 can (11 to 15 ounces) whole kernel corn, drained 1 10 oz can Rotel tomatoes 1 envelope taco seasoning 1 (28 oz) can tomatoes 1 sm can chopped chile peppers (4 ounces) 1 can (15 ounces) pinto beans 1 envelope Hidden Valley Ranch Dressing Cook the ground beef, then add the rest of ingredients. Heat through and let simmer to get all the flavors blended. Serve with over tortilla chips and top with shredded cheese. My boys like to eat it with doritos. I also use bake chicken instead of the beef and shred it with scissors. It's very flavorul and filling. You can also double the recipe which is what I usually do. It freezes well also. Oh I also have used ground turkey for this as well. Don't forget to drain the meat after you cook it before you add the other ingredients.

Prep Time: 5 minutes Cook Time: 30 minutes Total Time: 35 minutes Ingredients: 4 chicken breast halves salt and pepper or a spicy seasoning blend 1 can (16 ounces) black beans, drained and rinsed 1 can (12 to 15 ounces) whole kernel corn, drained 2 cups chunky salsa, divided 1 can (4 ounces) chopped mild green chile peppers, optional 1/4 cup chopped fresh cilantro, divided 6 ounces (1 1/2 cups) shredded Mexican cheese blend or mixture of Cheddar, Monterey Jack, and Colby cheeses Preparation: Heat oven to 350°. Lightly grease a 2-quart casserole or spray with nonstick cooking spray. Wash chicken and pat dry. Sprinkle the chicken all over with salt and pepper or a spicy chicken seasoning blend. Combine the drained beans, corn, 1 cup of the salsa, green chile peppers, and half of the cilantro. Put the mixture into the prepared baking dish. Arrange chicken over the bean and corn mixture, then spoon the remaining salsa over the chicken. Sprinkle with the remaining cilantro and top evenly with the cheese. Cover tightly with foil and bake for 25 minutes. Remove the foil and continue baking for 10 minutes, or until chicken is tender and juices run clear. Serves 4. More Chicken Casserole

Sprinkle with the vinegar and Cajun seasoning 3 Bake at 350 degrees F (175 degrees C) for 30 minutes 4 Remove chicken from oven and cover with green onion and mushrooms; then add a few more sprinkles of oil and vinegar and return dish to oven for 15 to 20 minutes more. Remove from oven and immediately place 1 slice of cheese on top of each chicken breast; cheese will melt. Serve immediately
