- Lemon juice works wonders. However, sear it for about 5-7 minutes on very high heat. Pre-heat the grill on high first. Then strike down the heat to about medium, and grill it until the juices run clear.
- I always take the skin off and pre cook it in boiling water with celery and onion and garlic till it's done ,which also gets rid of excess fat. Then I put my BBQ sauce or seasonings on it and let it marinate for a few hours or over night and then I just grill it untill it has that grilled look and flavor so it stays moist.
- It helps to marinade it for a while first. But, if you don't have time for all that, one thing that helps is if you sear the meat on both sides quickly to kind of seal in the juices. Also a covered grill will help make it a little juicier.
- I saw this on one of the grill out shows. Take a standard house brick cover it in aluminum foil and put it on top of the chicken as it grills. When its time to turn the chicken remove the brick and replace the brick on the up side. You will need several bricks each piece gets a brick. Be a Grilling Great Take care
