Casserole recipes? Need some easy one pan in the oven recipes?
I work and it's getting harder to cook big meals after work. I'm looking for casserole recipes that are easy and delicious, I especially love Mexican food or maybe some good chicken casseroles?

- this is one of our favorites... 1.one pkg of egg noodles cooked 2. 2 cans of cream of chicken soup or one large can of cream of chicken soup 3.2 pieces of chicken cooked and shredded or cubed 4. 1 tsp of dried thyme and 1/2 tsp of dried rosemary 5. salt and pepper to taste... 6. tsp of dried bread crumbs for topping directions mix together noodles and cream of chicken soup and add cut up chicken and herbs, mix well and add salt and pepper and pour into a casserole dish and sprinkle bread crumbs on top bake for 35-40 mins in a 350 degree oven and serve with salad and it is creamy and good ...
- Chicken enchilada casserole combines your favorites. Almost like a lasagna, you layer chicken and sauce between tortillas. You will need: chicken breasts, onions, garlic, mushrooms, chili powder, celery, tinned chopped tomatoes, chopped jalapenos, sliced green peppers, shredded cheese, enchilada sauce, salsa, chili beans and tortillas. Saute chicken until tender and shred. Add chopped onion, garlic (if you like it), mushrooms and chopped celery (optional), a tin of chopped tomatoes, chopped jalapenos to your taste, sliced green peppers and add chili powder, salt and pepper to taste. Simmer for 15 minutes, add chili beans, stir then layer shredded chicken mixture, cheese, tortillas, enchilada sauce, ending with tortilla and rest of enchilada sauce and remaining cheese. Cover with foil and bake for 30 minutes at 350. You can serve with Spanish rice and salsa or salad.

- Penne tomatoes,olives and 2 cheeses casserole 6 tablespoons olive oil 1 1/2 cups chopped onion 1 teaspoon minced garlic 3 28-ounce cans Italian plum tomatoes, drained 2 teaspoons dried basil 1 1/2 teaspoons dried crushed red pepper 2 cups canned low-salt chicken broth 1 pound penne or rigatoni 2 1/2 cups packed grated Havarti cheese 1/3 cup sliced pitted brine-cured olives (such as Kalamata) or one small can 1/3 cup grated Parmesan cheese 1/4 cup finely chopped fresh basil preparation Heat 3 tablespoons oil in heavy large Dutch oven over medium-high heat. Add onion and garlic; sauté until onion is translucent, about 5 minutes. Mix in tomatoes, dried basil and crushed red pepper. Bring to boil, breaking up tomatoes with back of spoon. Add broth; bring to boil. Reduce heat to medium; simmer and mixture thickens to chunky sauce and is reduced to 6 cups, stirring occasionally, about 1 hour 10 minutes. Season with salt and pepper. (Can be made 2 days ahead. Cover and chill. Rewarm over low heat before continuing.) Preheat oven to 375°F. Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well. Return pasta to same pot. Toss with 3 tablespoons oil. Pour sauce over and toss to blend. Mix in Havarti cheese. Transfer pasta to 13x9x2-inch glass baking dish. Sprinkle with olives, then Parmesan. Bake until pasta is heated through, about 30 minutes. Sprinkle with basil. I often top this off with sliced potabella mushrooms, then bake. If you can get the Havarti cheese , Jack cheese is just as good !
- Ingredients * 1/2 pound bacon * 1 pound ground beef * 1 onion, chopped * 1/2 cup ketchup * 3/4 cup brown sugar * 1 tablespoon vinegar * 1 teaspoon dry mustard * 1 (16 ounce) can baked beans * 1 (15.25 ounce) can kidney beans * 1 (15 ounce) can butter beans Directions 1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, break into medium pieces and set aside. In same skillet, brown beef and onion. Drain fat. 2. Preheat oven to 350 degrees F (175 degrees C). 3. Place bacon/beef mixture in a large bowl and stir in the ketchup, sugar, vinegar, mustard, baked beans, kidney beans (with liquid) and butter beans (with liquid). Mix well. 4. Spoon casserole mixture into a 9x13 inch baking dish and bake in the preheated oven for 1 hour, uncovered.
