- southern fried chicken 1 3-lb. fryer 1 tbsp. salt 1 tbsp. black pepper 2 eggs (beaten) 1/2 cup buttermilk 1/2 cup water hot sauce for taste 2 cups flour 1 tsp. paprika 1/4 tsp. ground thyme 1/2 tsp. granulated garlic 1 qt. oil for frying Cut chicken in eight pieces. Season well with salt and pepper. Set aside. Mix eggs, milk, hot sauce and water. Pour mixture over chicken. Let sit for 5 minutes or you could marinate for a couple of hours In a heavy paper bag, mix flour, paprika, ground thyme, and granulated garlic. Place chicken in bag with flour mixture. Shake until chicken is well coated. Heat oil -- oil should reach 350°F. Place chicken in hot oil. Fry, turning as chicken browns. Heavy parts such as breast, thighs, and legs will take 15 to 20 minutes, wings about 10 to 15 minutes. Drain chicken on paper towels. - Soak chicken over-night in butter milk. Do not rinse but drain in a colander for a few minutes. If you dont have time the day before, put the chicken in a brine for 30 minutes, then rinse and partially pat dry. Prepare a spice-shake like paprika, salt, lemon-pepper, onion-powder, etc. Shake over pieces generously. Heat 1/2 pot of oil in a skillet. Turn on oven to 370 and put small rack in casserole dish. Dredge chicken in flour and set on a rack or on paper towels for 3-5 minutes to let the flour firm up or it may come off in the pan. Gently put 3-4 pieces of chicken into oil and brown about 5-6 minutes. Oil should bubble immediately. Flip chicken and brown other side and dredge more pieces and set to rest. Remove pieces to rack and put in more chicken in skillet after letting oil heat for another minute. When all pieces are browned, and in the dish, put dish in the oven for about 30 minutes more to finish cooking. The rack allows the bit of oil in the coating to drip off. Combine in a bag: 3 cups flour, 1 tablespoon poultry seasoning, 1 tablespoon paprika. Coat wet pieces in bag 2 or 3 at a time. Fill a deep frying pan with 3 inches of oil and heat on medium high until a 1 inch cube of bread dropped in turns golden brown in one minute (about 360 degees F). Fry chicken pieces until golden brown, starting with the largest pieces (about 15 minutes on both sides). Reduce heat if chicken browns too quickly. Keep warm in 300F oven as remaining pieces are prepared
