I frequently cook chicken breast (skin off) with a spritz of olive oil and a sprinkling of Italian seasoning in the oven (covered for the first 20 min then uncovered to let them brown a little for 15 minutes. My husband has also grilled them this way too and that is even more flavorful. Just be careful not o burn because the are skinless and can burn a lot easier. Also, I have just roasted a whole chicken with celery onion, carrots and potatoes cut up around it. I just use a little salt and pepper then. cover and bake about 45 minutes to one hour (based on size of chicken) and uncover for just 10 to 15 minutes to brown. Both are easy recipes and low calorie and fairly light on the fat.
  2. One of my favorites is chicken stir fry. Slice chicken into thin strips, and saute in a bit of light chicken broth with garlic and a small splash of balsamic vinegar and soy sauce (use reduced sodium soy sauce). When cooked, remove from heat, put aside on a plate, then saute your vegetables. Start with onions, peppers, celery, carrots, cook for a minute or two, then add mushrooms, bok choy, snow peas, broccoli, cauliflower, cook for a minute or two then add bean sprouts. Finish cooking. Serve over brown rice or quinoa. Spice up your rice or quinoa by replacing some of the water with chicken broth and a splash of balsamic vinegar and soy sauce.
  3. Broil or grill the chicken. No need for any oil. Sprinkle with salt, pepper, paprika and sage as desired. Remove all skin before cooking for the healthiest.

Olive Garden Heart Healthy Chicken/Pasta 4 md cloves garlic chopped fine 1 1/4 lb fresh spinach 1 c chicken broth 1 lb chicken breast boned, skinned grilled 1 t olive oil or vegetable spray 1/2 c parmesan grated 1/2 ts nutmeg or mace salt and pepper 6 oz dry pasta shells 8 oz fresh pasta shells Cook the spinach in the broth until tender. Drain and reserve broth. Mash out excess liquid. Cook pasta. Preheat a sauté pan or heavy skillet over medium heat, add the oil or vegetable spray and sauté the garlic, stirring constantly, until it is white. Don't allow it to brown. Add the spinach and nutmeg or mace, salt and pepper. Add the chicken pieces to the spinach, stir and turn and add a small amount of the reserved cooking broth. Stir and turn the spinach until it is hot, adding broth as necessary. Remove pasta and immediately drain. Add the shells into the spinach mixture and blend well. Serve immediately with parmesan.
