Looking for a baked chicken breast recipe to cook in a roaster oven for about 30 people?
Anyone have any good recipes? I will be using boneless skinless chicken breasts or the chicken tenderloins. Kids will be served too, so I'm looking for a recipe most everyone likes. I could sautee it before and add it to the roaster oven, or cook it directly in the roaster itself. I was thinking of something with cream of chicken soup maybe... any ideas? Thanks in advance!

- Just about anything you might bake in your large oven, you can make it in the roaster oven. I don't have a specific recipe. I just make more of whatever I want to fix for a large group. The cream of chicken soup over chicken breasts will work well. Depending on the size of the breasts, cut them into two or three pieces and season well with salt and pepper. Saute them for about 3 minutes per side in a skillet just to put some color on them. I'd use olive oil. Spray the removable roaster pan with cooking spray. You won't need the rack. Put in your chicken pieces and set them aside. Saute some diced onions in the skillet where you sauteed the chicken. Add a little water or white wine. Meanwhile preheat that roaster over for 20 minutes. Stir the soup into the onions and correct seasoning. Heat it through. Pour it over the chicken and set the pan in the roaster oven. I'd cook it for about an hour at 350. Check it and cook a little longer if you need to.
